Inspections are made unannounced by environmental health specialists.

WHSD BASKETBALL/PERFORMING ART BUILDING, 700 Bulldog Drive, White Hall. Date of inspection Oct. 22. Jalapenos (77 degrees F) in the reach in refrigerator are out of safe temperature range. The jar of jalapenos were open and the jar said “Once opened, refrigerate.” Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Jalapenos were pulled during the inspection to be discarded.
WHITE HALL HIGH SCHOOL (WHITE HALL HIGH SCHOOL FOOTBALL CONCESSION), 700 Bulldog Drive, White Hall. Date of inspection Oct. 22. Observed dishes and paper towels stored in the hand washing sink during the inspection at the home side concession. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Dishes and paper towels were moved out of the hand washing sink during the inspection. Observed an accumulation of debris on the vent hood on the home side concession. Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials.

WHITE HALL HIGH SCHOOL – SFE LLC, 700 Bulldog Drive, White Hall. Date of inspection Oct. 22. Cauliflower (50 degrees F) and chicken (48 degrees F) in the salad bar cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Food that was just prepped and placed in the refrigerator was moved to another refrigerator and milk that had been in there overnight was pulled and discarded during the inspection.
RALLY’S HAMBURGERS, 403 N. Blake St. Date of inspection Oct. 22. Observed boxes stored directly on the floor. Boxes shall be stored 6 inches above the floor to be in compliance with established regulations. Corrected on site.
OCEAN’S FISH AND CHICKEN, 3700 Camden Road. Date of follow-up inspection Oct. 22. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observation: Observed cold-hold still not working. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

Observation: Observed cooler not holding correct temperature 63 degrees [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Cheesecake and condiments were removed from cooler.
OCEAN’S FISH AND CHICKEN, 3700 Camden Road. Date of inspection Oct. 7. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed no hand washing sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all handwashing sinks used by food workers and shall be clearly visible to food workers. Hand washing sign was given during time of inspection. Observed flour not in it’s original container. Food not in the original packages for use in Establishment must be identified with the common name of the Food. Observed seasoning salt stored directly on floor. Food must be stored 6 inches above the floor to be in compliance with established regulations. Fan in kitchen area to be cleaned. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Air vents need to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.
LEMUS STORE LLC, 11001 S. Highway 88, Altheimer. Date of inspection Oct. 22. Observation: Observed food residue (Sugar) on counter top. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
AUDUBON SCHOOL, 2206 Ridgway Road. Date of inspection Oct. 23. Observed paper products and water stored directly on floor. Food must be stored 6 inches above the floor to be in compliance with established regulations. Corrected on site.
