Specialist approves pumpkin seed mix
A roasted pumpkin seed snack seems fitting this time of year with pumpkins being so plentiful, an expert says. (Special to The Commercial)

This roasted pumpkin seed snack can be mixed together quickly and enjoyed while you are on the go with no cooking required, according to Rachel L. Luckett, family and consumer sciences coordinator for the Supplemental Nutrition Assistant Program and Expanded Food and Nutrition Education Program for the University of Arkansas at Pine Bluff School of Agriculture, Fisheries and Human Sciences.

“Roasted pumpkin seeds can be purchased already prepared, or you can roast your own,” Luckett said. “Either way, this snack seems very fitting this time of year with pumpkins being so plentiful.”

ROASTED PUMPKIN SEED SNACK MIX

Makes 8 Servings

Ingredients

2 cups crispy rice or wheat cereal squares

1/2 cup roasted whole pumpkin seeds

1/3 cup slivered almonds

1/2 cup dried cranberries

1/2 cup raisins

Directions

Wash hands with soap and water.

Mix all ingredients together and serve.
