We’ve heard tell that the food in the cafeteria at the University of Arkansas at Pine Bluff is delicious. Now we understand why.
Chef Paula Mayo, a UAPB dining services team member, was honored for her cooking talents in four Aramark Culinary Chef Tournaments, winning second place in the final competition.
“Her exceptional culinary skills and innovative approach earned her a coveted spot in the February 2025 finals, where she placed second,” a news release stated. “Mayo’s journey to the finals has been a testament to her determination and hard work.”
Mayo’s work stood out because of her creativity, precision and dedication to the culinary arts, the release stated.
“I was incredibly honored and excited to represent UAPB Dining in the finals,” said Mayo, whose winning dishes were a mix of traditional flavors and modern techniques. “Competing and winning in these tournaments has been a dream come true, and I am grateful for the support of my colleagues and the university community. I enjoy showcasing my skills on a larger stage and 97 home the title.”

Mayo was up against 35 other chefs this past fall and spring. The final cook-off was held at the University of Mississippi in late February where Mayo faced off against a chef from the University of Dallas. Their assignment was to create a signature stir-fry.
“We are immensely proud of Chef Mayo’s achievements,” said Avery Shelton, food service director at UAPB. “Her success is a testament to her hard work, passion and the high standards we uphold at UAPB.”
Congratulations to Chef Mayo. School food is not necessarily known for being something to get excited about. At least for UAPB, you have put that notion to rest.
