Local food trend gives new life to canning

LITTLE ROCK – The local foods movement and a desire to have lower sodium and lower-sugar foods is breathing new life into an old favorite: canning.

“We have seen an uptick in the number of questions about food preservation as people delve more deeply into homegrown foods,” said Lameria Colclough-Triplett, Pulaski County extension agent for the University of Arkansas System Division of Agriculture.

Canning has become so intriguing to so many, that the Food Network named it one of its top 10 trends in 2011.

Colclough-Triplett is holding canning workshops and classes for people who want to dive into a fresh tradition.
