Jefferson County Food Safety reports for the week of 11-27-16


The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• Kosmic Kidz Outreach Inc., 313 W. Barraque St. Date of inspection Nov. 17. Seasoning in dry storage should be labeled with common name of food it contains (Not in compliance; repeat violation; corrected on site during inspection.) Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation; corrected on site during inspection.)

• Fino Italian Restaurant, 310 E. Fifth Ave. Date of inspection Nov. 17. Observed employee touching ready to eat food with bare hands (Not in compliance; repeat violation; corrected on site during inspection.) Hand washing sink should not be blocked by trash can. It should be maintained so that it is accessible at all times (Not in compliance; repeat violation.) Paper towels needed at hand washing sinks (Not in compliance; repeat violation.) Raw fish should not be stored above ready to eat foods (Not in compliance; repeat violation.) All seasonings and food being stored in freezers and coolers should be covered while being stored (Not in compliance; repeat violation.) Automatic dishwasher not dispensing sanitizer properly (Not in compliance; repeat violation.) Some cold holding temperatures out of safe range — must be 41 degrees F or below (Not in compliance; repeat violation.) Seasoning in containers should be stored at least 6 inches off of the floor (Not in compliance; repeat violation.) Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Clean plates should be stored covered or inverted to prevent contamination (Not in compliance; repeat violation.)

• White Hall Middle School, 8106 Dollarway Road, White Hall. Date of inspection Nov. 18. Time not kept on vegetables on serving line not being kept cold (Not in compliance; repeat violation; corrected on site during inspection.) Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation; corrected on site during inspection.)

• White Hall High School, 700 Bulldog Drive, White Hall. Date of inspection Nov. 18. Opened deli meats should be properly date marked if held for more than 24 hours (Not in compliance; repeat violation; corrected on site during inspection.) Vent hood needs to be cleaned (Not in compliance; repeat violation.)

• Randall L. Williams Correctional Facility, 7206 W. Seventh Ave. Date of inspection Nov. 21. Some floor tiles throughout kitchen need to be repaired (Not in compliance; repeat violation.) Some lights throughout kitchen need to be shielded (Not in compliance; repeat violation.)

• Rick’s Quick Stop, 6000 W. Barraque St. Date of inspection Nov. 21. Raw meat should not be stored above ready to eat foods (Not in compliance; repeat violation; corrected on site during inspection.) Ice machine deflector shield needs to be cleaned (Not in compliance; repeat violation; corrected on site during inspection.) Some hot holding temperatures out of safe temperature range — must be 135 degrees F or above (Not in compliance; repeat violation; corrected on site during inspection.) Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation; corrected on site during inspection.) Freezer door near walk in cooler needs to be repaired (Not in compliance; repeat violation.) Need test strips to test sanitizer strength (Not in compliance; repeat violation.) Restroom door should be self closing (Not in compliance; repeat violation.)

• Brookshire food store, 2800 Hazel St. Date of inspection Nov. 22. Hand washing sink in produce area stopped up and needs to be cleaned (Not in compliance; repeat violation; corrected on site during inspection.) Paper towels should be provided at hand washing sink (Not in compliance; repeat violation; corrected on site during inspection.) Hand washing sink in produce area blocked — should be accessible at all times for employee use (Not in compliance; repeat violation; corrected on site during inspection.) Chemicals in produce and meat departments should be stored separate from equipment and food (Not in compliance; repeat violation; corrected on site during inspection.) Steamer in meat department needs to be repaired — leaking condensation (Not in compliance; repeat violation.) Shelves holding flour in back and store need to be cleaned (Not in compliance; repeat violation.) Floor in back where flour is being stored needs to be cleaned (Not in compliance; repeat violation.)

• Brookshire food store deli, 2800 Hazel St. Date of inspection Nov. 22. Hand washing sink in bakery should only be used for washing hands (Not in compliance; repeat violation.) Can opener blade needs to be properly cleaned and sanitized (Not in compliance; repeat violation.) Some cold holding temperatures out of safe range — must be 41 degrees F or below (Not in compliance; repeat violation.) Opened deli meats should be date marked if held for more than 24 hours (Not in compliance; repeat violation.) Improper thawing methods being used (Not in compliance; repeat violation.) Seasonings out of their original package should be labeled with common name of the food it contains (Not in compliance; repeat violation.) Wiping cloths should be kept in a sanitizer solution between use (Not in compliance; repeat violation.) Outside of cooking equipment needs to be cleaned (Not in compliance; repeat violation.) Trash cans containing food residue should be kept covered when not in continuous use (Not in compliance; repeat violation.) Floors in walk in freezer and kitchen need to be cleaned (Not in compliance; repeat violation.)
