The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.
The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• Moma Keta’s Childcare II, 916 S. Cherry St. Date of inspection March 7. Opened packaged of sugar observed in cabinet; sugar should be stored in a sealed container once opened (Not in compliance; repeat violation; corrected on site during inspection.) Sugar observed being stored in a single use cashew container and should not be stored in that manner (Not in compliance; repeat violation.)
• L.A. Davis Thompson Hospitality, 1200 N. University Drive. Date of inspection March 7. TCS foods shall be thawed using an approved method (Not in compliance; repeat violation; corrected on site during inspection.) Observation: All trash cans need lids. Only need lids if they contain food residue and are not in continuous use (Not in compliance; repeat violation.)
• Olive Mart, 2202 S. Olive St. Date of inspection March 8. Ice should be properly labeled with store information name, address and phone number (Not in compliance; repeat violation.)

• Econolodge, 210 N. Blake St. Date of inspection March 8. Paper towels are not provided in the restroom hand washing sink; paper towels should be provided at all hand washing sinks (Not in compliance; repeat violation.) Thermometer not observed in refrigerator holding food that must stay cold; thermometer is needed in the refrigerator (Not in compliance; repeat violation.) No test strips are available in establishment; test strips are needed to test the sanitizer strength (Not in compliance; repeat violation.) Only two sinks noted in the kitchen area during inspection; a sink with at least 3 compartments should be provided to manually wash, rinse, and sanitize equipment and utensils (Not in compliance; repeat violation.) Restroom door near kitchen should have a self closing door (Not in compliance; repeat violation.)
• Taco Bell, 3501 Camden Road. Date of inspection March 8. Observation: Need to clean non-food contact surfaces (Not in compliance; repeat violation.) Observation: All trash cans need lids; only need lids if they contain food residue and are not in continuous use (Not in compliance; repeat violation.)
• Forrest Park School, 2501 W. 10th Ave. Date of inspection March 9. Observed trays being stored face up and uncovered; trays should be stored covered or inverted to prevent from contamination (Not in compliance; repeat violation; corrected on site during inspection.) Personal fan is unclean and needs to be cleaned before next use (Not in compliance; repeat violation.) Some floor tiles under and in front of freezer in cafeteria are missing and need to be replaced (Not in compliance; repeat violation.)
• Klassic Kids Day Care, 2407 S. Cherry St. Date of inspection March 8. Opened package of sugar should be stored in a sealed container (Not in compliance; repeat violation.)
• Community Empowerment, 1711 S. Ohio St. Date of inspection March 13. No violations reported.
• Wendy’s, 2909 W. 28th Ave. Date of inspection March 10. Observed employee cleaning floors and not washing hands before touching raw meat to put on grill; hands should be washed between changing tasks (Not in compliance; repeat violation; corrected on site during inspection.) No soap observed at back hand washing sink; soap should be supplied at all hand washing sinks; soap was placed at hand washing sink during inspection. Observed some bacon out of temperature with a 6 hour hold; bacon should only have a 4 hour hold when kept out of temperature; bacon was discarded during inspection (Not in compliance; corrected on site during inspection.) Need thermometers in all coolers holding food that need to stay cold (Not in compliance; repeat violation.)
