The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• T’S PLACE, 3714 Camden Road. Date of inspection Oct. 28. No hand washing observed in kitchen area. Provide hand wash sinks as necessary for convenient use by employees in food preparation and warewashing areas. Food not in original containers are not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the Food. Walls are soiled in kitchen area. Nonfood contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observed missing ceiling tile in establishment. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair.
• DOLLAR GENERAL, 10104 U.S. Highway 63. Date of inspection Oct. 27. No paper towels observed in restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and ware washing areas. Paper towels placed in restroom during inspection.

• TWO BROTHERS ONE STOP, 2215 S. Blake St. Date of inspection Oct. 27. Observed wiping cloths laying on the counter. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment.
• WING SHACK III, 2701 E. Harding Ave. Date of inspection Oct. 27. No paper towels at cook’s hand sink. Corrected. Saw no sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.
• GO DUCKIN LLC, 10501 U.S. Highway 63. Date of inspection Oct. 27. Chicken (128 degrees F) in hot box was out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Mushrooms and banana peppers (45 degrees F) and black olives (46 degrees F) in pizza prep refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. No date marking observed on some food in deli cooler and reach in refrigerator held for more than 24 hours. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Observed chicken and fish being thawing sitting in a container of water in the three compartment sink. Time/Temperature Control for Safety (TCS) Food shall be thawed (A) Under refrigeration that maintains the FOOD temperature at 41°F or less, (B) Completely submerged under running water 70°F or less with enough velocity to float off loose particles down the drain and maintains the food above 41°F, or (C) as part of the cooking process. Observed vegetables sitting out for customers to use without a proper guard. Food on display shall be protected from contamination from consumers by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means. Observed single use cups being stored out of the original package. Single use cups must be stored in original package and in a manner that prevents contamination. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Counter tops where drink machines are located are unclean and need to be cleaned.
