The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

CHEF LEE, 502 Mallard Loop. Date of inspection Sept. 4. Observed several containers of food being stored uncovered in the refrigerators and freezers and some food being stored directly in the freezer in no containers or packages. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Observed food sitting in containers of water to thaw. Time/Temperature Control for Safety (TCS) Food shall be thawed (A) Under refrigeration that maintains the FOOD temperature at 41°F or less, (B) Completely submerged under running water 70°F or less with enough velocity to float off loose particles down the drain and maintains the food below 41°F, or (C) as part of the cooking process. Observed containers of food being stored directly on the floor throughout the kitchen. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor. Observed an accumulation of debris on the cooking surfaces and shelving in the kitchen. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. No hot water available at the hand washing sink in the employee restroom. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHMENT. Observed some missing and damaged ceiling tiles and floor tiles throughout the kitchen. The PHYSICAL FACILITIES shall be maintained in good repair.

P.B. CORNER MARKET LLC,: 2118 W. 13th Ave. Date of inspection Sept. 5. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the RETAIL FOOD ESTABLISHMENT.

MEME’S LEARNING ACADEMY II, 1611 Brentwood Drive. Date of inspection Sept. 5. Observed wiping cloths laying in sink. Wiping cloths shall be used as intended and in compliance with regulations pertaining to Retail Food establishment. Corrected on site.

CSO Head Start – Blake Street, 310 S. Blake St. Date of inspection Sept. 5. Observed small openings under the doors leading to the outside in the kitchen. All outer openings of a food establishment should be protected against the entry of insects and rodents. Establishment gets their food served from Community Service Office – St. Peters. Facility only holds pre packaged snacks and milk and juice in the refrigerator. No food is being prepared at this establishment.

TAQUERIA MARTIN, mobile, 2102 N. Bryant St., White Hall. Date of follow-up inspection Sept. 6. No violations reported.

MEME’S LEARNING ACADEMY, 801 S. Walnut St. Date of inspection Sept. 6. Observed syrup not labeled. Food packaged in Retail Food Establishment, shall be labeled as specified in law. Corrected on site. Observed paper cups stored directly on floor. Food must be stored six inches above floor to be in compliance with established regulations. Corrected on site.

KENTUCKY FRIED CHICKEN, 3002 Pines Mall Drive. Date of follow-up inspection Sept. 18. No violations reported.

KENTUCKY FRIED CHICKEN, 3002 Pines Mall Drive. Date of inspection into complaint Sept. 4. Observed several insects in the dining area of the establishment. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions. Observed a small opening to the outside in between the two entrance doors. All outer openings of a food establishment should be protected against the entry of insects and rodents.
