Food Safety Sept. 14

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

BIG RED TRAVEL PLAZA , 8110 Sheridan Road, White Hall. Date of inspection Sept. 8. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be covered when not in continuous use.

THE CAJUN FRIED HOUSE, 3007 S. Olive St. Date of inspection into complaint Sept. 10. No violations pertaining to complaint during the inspection.

SSZ LLC FOOD STORE, 8539 Sheridan Road, White Hall. Date of follow-up inspection Sept. 10. Observed bulk bins of seasonings and spices not in their original containers not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the food. Observed several single use cans being reused to store spices in. Single service items must not be reused.

SSZ LLC FOOD STORE, 8539 Sheridan Road, White Hall. Date of inspection Sept. 8. Observed several containers of food in the coolers being stored uncovered. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Burrito (128 degrees F) and chicken (114 degrees F) in the hot box are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Beef patty (45 degrees F) in the small, green cooler and lamb (42 degrees F) and sausage (43 degrees F) is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed bulk bins of seasonings and spices not in their original containers not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the food. Observed several flying insects in the dry storage areas of the kitchen. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions. Observed several boxes of food in the walk in freezer stored directly on the floor. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor. Observed several single use cans being reused to store spices in. Single service items must not be reused. Observed an accumulation of food debris on the shelves and cart holding the spices in the kitchen. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Permit has expired. It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law. Permit was paid online during the inspection.

PINE BLUFF HIGH SCHOOL (JACK ROBEY), 4101 S. Olive St. Date of inspection Sept. 10. Observed some residue on the shelves in the kitchen. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. 9/24/2025 55 6-501.10 C Observed some damaged ceiling tiles in the concession area. The PHYSICAL FACILITIES shall be maintained in good repair. Not in operation during time of inspection.

ELIOR NORTH AMERICA @JACK ROBEY JR HIGH SCHOOL, 4101 S. Olive St. Date of inspection Sept. 10. Observed containers of raw chicken being stored above cheese in the walk in cooler. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. The chicken was moved to the bottom shelf during the inspection. Milk (43 degrees F) in the milk box is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed some missing ceiling tiles in the dry storage room. The PHYSICAL FACILITIES shall be maintained in good repair.
