The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

REDFIELD TRUCK STOP-ZAIMA ENTERPRISES LLC, Highway 65 and 46, Redfield. Date of follow-up inspection Aug. 29. Observation: Observed missing ceiling tiles in establishment. Observation: Establishment needs to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

REDFIELD TRUCK STOP-ZAIMA ENTERPRISES LLC, Highway 65 and 46, Redfield. Date of inspection into complaint Aug. 6. Observation: Observed kitchen with an accumulation of food residue, and dirt. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Observed missing ceiling tiles in establishment. Observation: Observed floors, walls and ceiling in storage area unclean and needs to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

MAMMOTH ORANGE, 1315 Donna Drive, Redfield. Date of inspection Aug. 29. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed no hand washing sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all handwashing sinks used by food workers and shall be clearly visible to food workers. Observation: Observed walk-in cooler not holding temperature (44). Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observation: Observed cooler unclean and needs to be cleaned. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

J & B GAS AND GRILL LLC, 4200 S Highway 365, Jefferson. Date of follow-up inspection Aug. 29. No violations reported.

Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

J & B GAS AND GRILL LLC, 4200 S Highway 365, Jefferson. Date of inspection Aug. 12. Bologna (50 degrees F) and bologna (51 degrees F) in the deli meat cooler and diced tomatoes (44 degrees F) in the prep cooler is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

ARON’S GRILL AND CATERING MOBILE, 1314 Homestead Drive, White Hall. Date of inspection Aug. 29. Observed raw bacon and eggs being stored above beverages in the reach in refrigerator. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Raw bacon and eggs were moved to the bottom of the reach in refrigerator during the inspection. No consumer advisory noted on the menu. REMINDER shall include asterisking the animal-derived FOODS requiring DISCLOSURE to a footnote that states: (1) Regarding the safety of these items, written information is available upon request; (2) Consuming raw or undercooked MEATS, POULTRY, seafood, shellfish, or EGGS may increase your RISK of foodborne illness; or (3) Consuming raw or undercooked MEATS, POULTRY, seafood, shellfish, or EGGS may increase your RISK of foodborne illness, especially if you have certain medical conditions.

ADDI’S CORNER 2, 101 N. Blake St. Date of inspection Aug. 29. No paper towels available at the hand washing sink in the kitchen or the restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and ware washing areas. Paper towels were provided at the hand washing sinks during the inspection. Observed a build up of residue on the ice machine deflector shield. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. The ice machine deflector shield was cleaned during the inspection. The three compartment sink is visibly unclean. The three compartment sink needs to be cleaned. 9/12/2024 55 6-501.10 C Some floor tiles in the warewashing area and ceiling tiles throughout the establishment are in disrepair. The PHYSICAL FACILITIES shall be maintained in good repair.
