Food Safety Oct. 19

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

J-MART STORE, 13800 Dollarway Road, White Hall. Date of inspection Oct. 15. No soap provided in the restroom. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashing sink. Observed ice packaged in store not labeled with store identifying information on it. Food packaged in Retail Food Establishment, shall be labeled as specified in law. Observed several flies in the establishment. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions. Ice machine interior is damaged and needs to be repaired. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Floors in the establishment are unclean, especially in the kitchen area. Clean the physical facilities as often as necessary to keep them clean. Observed some floor tiles and ceiling tiles damaged in the kitchen area. The PHYSICAL FACILITIES shall be maintained in good repair.

GRAB N FILL UP, 601 N. Hutchinson St. Date of inspection Oct. 15. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed wiping cloths on counter top. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observation: Observed nonfood contact surface unclean. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

FOOD HUT, mobile, 1501 Dancing Rabbit Drive. Date of inspection Oct. 15. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM.

PINE BLUFF FOOD MART LLC, 3402 Old Warren Road. Date of inspection Oct. 16. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observation: Observed cold not holding correct temperature. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Food was moved to another cooler during time of inspection. Observed paper products stored directly on the floor. Food must be stored six on the floor to be in compliance with established regulations. Observed wiping cloths laying through out establishment. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observation: Observed an accumulation of debris on nonfood contact surfaces. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Corrective Action: Establishment needs to be cleaned. Clean the physical facilities as often as necessary to keep them clean.

KIM’S RESTAURANT, 204 S. Main St., Altheimer. Date of inspection Oct. 16. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed no date marking on steaks in cooler. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Date was placed on steak during time of inspection. Observation: Observed counter top unclean and needs to be cleaned. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Floors in establishment needs to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.
