Food Safety Nov. 9

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

FRIENDSHIP ASPIRE ACADEMY CHARTER SCHOOL, 700 S. Main St. Date of inspection Nov. 4. Observed raw beef being stored above eggs and beside cheese and juice. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Raw beef was moved to the bottom of the cooler during the inspection.

RICK’S QUICK STOP, 6000 W. Barraque St. Date of inspection Nov. 5. Observed an accumulation of debris build up on the deflector shield of the ice machine. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. Cut tomatoes and mushrooms (54 degrees F) in the sandwich/salad prep cooler is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed a dish soap bottle being used to store water on for the grill. A container previously used to store POISONOUS OR TOXIC MATERIALS may not be used to store, transport, or dispense FOOD. The dish soap bottle was discarded during the inspection.

A AND S QUICK MART, 1416 S. Blake St. Date of inspection Nov. 5. Observed ice packaged in the store with no store identifying information on the bags. Food packaged in Retail Food Establishment, shall be labeled as specified in law. Observed an opening around the back door. All outer openings of a food establishment should be protected against the entry of insects and rodents. Two compartment sink noted in establishment. Three compartment sink needed to properly wash, rinse, and sanitize dishes. Sinks in the ware-washing area are unclean. Sinks should be cleaned before using next. Restroom door is not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. Flooring in the warewashing area and the back storage room are unclean. Clean the physical facilities as often as necessary to keep them clean. Some ceiling tiles and floor tiles throughout the establishment are missing or damaged. The PHYSICAL FACILITIES shall be maintained in good repair.
