Inspections are made unannounced by environmental health specialists.

SHELL QUICK MART GGHA LLC, 7001 Sheridan Road. Date of follow-up inspection Oct. 25. Fish (127 degrees F) and chicken strip (120 degrees F) in the hot box are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth.
SHELL QUICK MART GGHA LLC, 7001 Sheridan Road. Date of inspection Oct. 18. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Chicken strip (108 degrees F), fish (112 degrees F), and burrito (126 degrees F) in the hot box are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Food that cannot maintain a safe temperature of 135 degrees F or above should be discarded after 4 hours until repairs can be made on the hot box to maintain safe temperatures. Milk (49 degrees F) in the milk/cheese display cooler is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed insect control sticky traps that are not designed to retain the insect within the device and over food holding area. Insect control devices are designed to retain the insect within the device, not be located over a food prep area and in a manner that prevents dead insects and insect fragments from getting into food, equipment, utensils, and linens and unwrapped single-service and single-use articles. Insect control devices were removed and discarded during the inspection.

The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions.

Floors throughout the establishment, especially under and behind equipment, are unclean. Clean the physical facilities as often as necessary to keep them clean.

THE FAMILY DINER, 116 S. Highway 365 City, Redfield. Date of inspection Oct. 21. Observed employee touch food with no gloves. No bare hand contact with exposed, ready-to-eat food or ice. Use gloves, spatulas, tongs, deli tissue or other dispensing equipment. Observed food items stored directly on floor. Food must be stored six inches above the floor to be in compliance with established regulations. Observation: Walls are soiled in the kitchen area. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
RISHI LLC dba Fast Lane Express Pine Bluff, 1502 E. Harding Ave. Date of inspection Oct. 28. Observed items in the three compartment sink being stored. The three compartment sink should be cleaned and not used for storage.
DOLLAR TREE, 1401 E. Harding Ave. Date of inspection Oct. 28. Observed boxes of food and beverages sitting on the floor in the walk in cooler and walk in freezer. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor.
OCEAN’S FISH AND CHICKEN, 3700 Camden Road. Date of follow-up inspection Oct. 29. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed cold hold not holding temperature 49 degrees. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Regional EH Manager, Keith Blount, visited this facility and confirmed temperatures in the malfunctioning cold hold unit. He spoke with the owner and recommended the repair person take a look again. He requested the owner be present for the re-inspection.
