Food Safety Nov. 16

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

PINE BLUFF HIGH FOOTBALL CONCESSION, 521 W. 10th Ave. Date of inspection Nov. 7. Concession stands have not been used since November 2023. Water should be turned back on in the visitor side concession stand before next use. Observed openings in the walls of the visitor side concession. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed dead pests throughout the concession stands. Dead pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests. Warewashing sinks are unclean. Warewashing sinks need to be cleaned before next use. Observed an accumulation of debris on the counter tops and shelving. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Water turned off at the visitor side concession. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHMENT. Floors and walls throughout the concession stand are unclean. Clean the physical facilities as often as necessary to keep them clean.

LOVE’S TRAVEL SHOP, 4800 Highway 65 S. Date of inspection Nov. 10. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use. Observed a sticky residue on the floors in front of the fruit storage area in the walk in cooler. Clean the physical facilities as often as necessary to keep them clean.

LOVE’S TRAVEL SHOP/SUBWAY, 4800 Highway 65 S. Date of inspection Nov. 10. Chicken (57 degrees F) in a sealed bag on the prep table is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Employees were not aware how long the chicken had been out of temperature. The bag of chicken was discarded during the inspection. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.

LUCKY’S CAFE LLC, 310 E. Fifth Ave. Date of inspection Nov. 12. Observed raw beef being stored above ready to eat foods. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Raw beef was moved to the bottom of the refrigerator during the inspection.

KITCHENS ON WHEELS, mobile, 407 W. Martin Place. Date of inspection Nov. 12. Mobile unit not in operation during time of inspection. Owner said that the mobile unit has not been in operation since 2020. Owner said that they plan on using the mobile unit next year. He stated that they will clean it to prepare it to use and call when they are ready. No paper towels observed at hand washing. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. No soap observed at hand washing sink. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashing sink. No test strips noted in mobile unit. Test strips must be available and used to test the strength of chemical sanitizing solutions. Counter tops have visible residue on them. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Water is not available at the time of inspection. Mobile unit is not in use. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHMENT before opening next. Floors in the mobile unit are visibly unclean. Clean the physical facilities as often as necessary to keep them clean.

GURSIMAR-LLC, 2401 E. Sixth Ave. Date of inspection Nov. 12. Observed food debris in the hand washing sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. No soap observed at the hand washing sink. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashing sink. No paper towels observed at the hand washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Egg roll (111 degrees F), chicken strip (120 degrees F), and sausage (126 degrees F) in the hot box are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Observed insects in the kitchen and dry storage area of the establishment. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions. Observed a sticky fly trap used above the food prep area. Insect control devices are designed to retain the insect within the device, not be located over a food prep area and in a manner that prevents dead insects and insect fragments from getting into food, equipment, utensils, and linens and unwrapped single-service and single-use articles. Observed ice in an ice chest for customers to scoop out on the counter tops by the drink machine. Food on display shall be protected from contamination from consumers by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Observed 0 foot candles of light in the restroom and walk in cooler. A light intensity of at least 10 foot candles in the walk in cooler and 20 footcandles in the restroom.
