Food Safety May 12


The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

OCEANS FISH & CHICKEN, 2213 E. Harding Ave. Date of inspection April 30. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed boxes of fish stored directly on floor in walk-in cooler. Food must be stored six inch above floor to be in compliance with established regulations. Observed wiping cloths laying in sink. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment Observation: Cardboard is being used to cover shelf. Cardboard is an absorbent material and shall not be used in the kitchen area. Observation: Ceiling tiles are soiled in establishment and needs to replaced. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

KYLAN’S KITCHEN, 2221 S. Olive St. Ste J. Date of inspection April 30. Lemonade on the dry storage shelf labeled “Keep Refrigerated” on the bottle is 72 degrees F. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Lemonade that was in the dry storage was pulled to be discarded during the inspection. Observed a build up of residue on the floors and walls near the fryers in the kitchen. Clean the physical facilities as often as necessary to keep them clean.

WING STOP, 5401 S. Olive St., Suite 200. Date of inspection May 1. Observed containers of food in the small freezer in the kitchen being stored uncovered. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Containers of food in the small freezer were covered with a lid during the inspection.

BURGER BARN, 1300 S. Hazel St. Date of follow-up inspection May 6. Violation corrected during time of inspection.

RALLY’S HAMBURGERS, 2301 W. 28th Ave. Date of follow-up inspection May 6. No violations reported.

RALLY’S HAMBURGERS, 2301 W. 28th Ave. Date of follow-up inspection May 3. Ice cream machine is still not working and was turned off during inspection. Inspector asked the manager to call them when it gets repaired.

RALLY’S HAMBURGERS, 2301 W. 28th Ave. Date of inspection April 18. Chicken (99 degrees F) in the hot hold unit by the fryers is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Manager said that the chicken was cooked at about 10am. Chicken was reheated to 185 degrees F during the inspection. Ice cream mix (68 degrees F) in the ice cream machine is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Ice cream machine was turned off to thaw, drain, and clean out during the inspection. Manager is calling maintenance to look at the ice cream machine.
