REDFIELD TRUCK STOP-ZAIMA ENTERPRISES LLC, HWY 65 and 46, Redfield. Date of inspection April 28. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed no paper towels at hand washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Paper towel was place at hand washing sink during time of inspection. Observation: Observed an accumulation of grease build-up on grill. Corrective Action: The food contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. Observation: Walls and ceiling are soiled in kitchen area. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Observed missing ceiling tiles in establishment. Perimeter walls and roof of retail food establishment shall effectively protect the establishment from the weather and the entry of insects , rodents and other animals. Observation: Observed floors unclean in establishment. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.
MEXICO LINDO TAQUERIA, 4605 Dollarway Road, White Hall. Date of inspection April 28. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed cooking utensils being held in the hand washing sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Cooking utensils were moved to the three compartment sink during the inspection.

JEEWAN GROCERIES LLC, 2317 W. 28th Ave. Date of follow-up inspection April 29. Observed ice bin being stored uncovered where ice is exposed to outside contamination. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor. No hot water observed in establishment. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the RETAIL FOOD ESTABLISHMENT. Restroom doors are not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. Some ceiling tiles are damaged throughout the facility. The PHYSICAL FACILITIES shall be maintained in good repair.
