Food Safety March 9

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

THE CORNER STORE, 3800 Highway 425 South. Date of inspection Feb. 25. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. No soap is provided at the hand-washing sink in the restroom. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each hand-washing sink. Soap was provided during the inspection. No paper towels are provided at the hand-washing sink in the restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. Black olives (45 degrees F) and sliced tomatoes (47 degrees F) in the small prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. All food in the small prep cooler was discarded during the inspection. Employee said ice is normally kept under the containers of food in the small prep cooler. Observed some cut deli meats that employee said was cut over 24 hours ago not date marked. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Deli meats were date marked during the inspection. No toilet tissue available in the restroom during the inspection. A supply of toilet tissue shall be available at each toilet. Toilet tissue was provided during the inspection. Observed fryers in the kitchen area that the employee said was being used to cook food not under vent hood. Ventilation hood systems and devices shall be sufficient in number and capacity to prevent grease or condensation from collecting on walls or ceilings.

PRECIOUS MEMORIES LEARNING ACADEMY, 5621 Dollarway Road. Date of inspection Feb. 25. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed an accumulation of food debris on counter top. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

ELIOR NORTH AMERICA @ BELAIR ACADEMY, 1301 Commerce Road. Date of inspection Feb. 25. Observed pork in a bag sitting out to thaw in a pan on the counter. Time/Temperature Control for Safety (TCS) Food shall be thawed (A) Under refrigeration that maintains the FOOD temperature at 41°F or less, (B) Completely submerged under running water 70°F or less with enough velocity to float off loose particles down the drain and maintains the food below 41°F, or (C) as part of the cooking process. Pan of pork was put in the walk in cooler during the inspection. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.

SMALLCAKES, 502 Mallard Loop, Suite J Loop. Date of inspection Feb. 26. Observed several unlabeled bottles of chemicals in the establishment. Working containers used for storing POISONOUS OR TOXIC MATERIALS such as cleaners and SANITIZERS taken from bulk supplies shall be clearly and individually identified with the common name of the material. Bottles of chemicals were labeled with the substance it contains during the inspection. Observed some dishes drying sitting on the drainboard on a cloth. After cleaning and sanitizing, equipment and utensils shall be air dried and may not be cloth dried.

REEF-GREAT WESTERN DINING, 6811 S. Hazel St. Date of follow-up Feb. 26. Observed damaged floor tiles in the ware-washing area. The PHYSICAL FACILITIES shall be maintained in good repair.

REEF-GREAT WESTERN DINING, 6811 S. Hazel St. Date of inspection Feb. 25. Automatic dishwasher is not dispensing sanitizer solution correctly. A chlorine solution shall measure 50-100 mg/L at a temperature of 75°F-100°F. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be covered when not in continuous use. Observed damaged floor tiles in the ware-washing area. The PHYSICAL FACILITIES shall be maintained in good repair.

ERMER’S LEARNING ACADEMY INC., 4006 Barraque St., P.O. Box 236. Date of inspection Feb. 26. Observed handwashing sink blocked. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Paper was removed from sink.
