Food Safety March 29

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

GO DUCKIN LLC, 10501 U.S. 63. Date of inspection March 24. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Crispito (128 degrees F), chicken (114 degrees F), and egg roll (113 degrees F) in the hot box are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Observed damaged floor and ceiling tiles throughout the facility. The PHYSICAL FACILITIES shall be maintained in good repair.

AWESOME LIL WONDERS-PINE BLUFF, 1702 W. Sixth Ave. Date of March 24. Sanitizer is reading 0 ppm in the three compartment sink. A quaternary ammonium compound solution shall be used at a minimum temperature of 24°C (75°F), and be used as indicated by the manufacturer’s use directions included in the labeling. Sanitizer was manually placed in the three compartment sink during the inspection.

AVITAJ LLC, 8006 Dollarway Road, White Hall. Date of follow-up inspection March 24. Cut onion (46 degrees F), cut tomato (46 degrees F), and sliced cheese (46 degrees F) in the small, glass door refrigerator is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Food was moved out of the refrigerator during the inspection. Small, glass door refrigerator in the kitchen should not be used until it can hold food at 41 degrees F or below.

AVITAJ LLC, 8006 Dollarway Road, White Hall. Date of inspection March 19. Observed raw beef above eggs and cooked sausage in the small, glass door refrigerator in the kitchen and raw beef above cheese in the walk in cooler. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Cut onion (47 degrees F) and fish (49 degrees F) in the small, glass door refrigerator in the kitchen are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed a leak in the pipes under the three compartment sink. Pipes should be repaired so that they do not leak.

SOBRIETY LIVING CENTER, 2001 W. Fifth Ave. Date of inspection March 25. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Hand washing sink was blocked during time of inspection. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Observed beans stored directly on floor on floor. Food must be stored 6 inches above the floor to be in compliance with established regulations. Observation: Observed no test strips in establishment. Corrective action: Test strips must be available and used to test the strength of chemical sanitizing solutions.

McDONALD’S, 8012 Sheridan Road, White Hall. Date of inspection March 25. Observed ice being stored in an uncovered bin by the drive thru. Except during cooling, food shall be stored in packages, covered containers, or wrappers. A lid was placed on the ice bin during the inspection. Observed liquid waste at the bottom of the small coolers holding milk and frappe mix in the front. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed food waste on some counter tops throughout the kitchen. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed trash cans containing food residue being kept uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use. Observed an accumulation of food waste and other debris on the floors throughout the kitchen. Clean the physical facilities as often as necessary to keep them clean.

EL SOL MEXICAN RESTAURANT, 3801 Camden Road, Suite 9. Date of inspection March 25. Hand washing sink should only be used for hand washing. The hand washing sink and aids and devices may not be used for food preparation or utensil washing, or a service sink or in any other manner other than handwashing. Corrected during time of inspection. Observed pepper not covered in walk-in cooler. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Covered during time of inspection.

DAIRY QUEEN, 7810 Sheridan Road, White Hall. Date of inspection March 25. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed an open bag of salt in the dry storage room. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor. Salt was poured into plastic storage containers and closed with lids during the inspection.

UBQ BARBEQUE AND SOUL FOOD, 2203 W. 26th Ave. Date of opening inspection March 26. Observation: Restroom needs a self closure on door.

TURNING POINT YOUTH DEVELOPMENT CTR, 508 S. Mulberry St. Date of inspection March 26. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM.
