Food Safety March 15

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

MAMMOTH ORANGE, 1315 Donna Drive, Redfield. Date of inspection March 9. Observed sugar stored directly on the floor. Food must be stored six inches above the floor to be in compliance with established regulations. Observation: Observed walls and vent hood pipe with an accumulation of grease and food residue. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

JENKINS MEMORIAL SCHOOL, 2410 Rike St. Date of inspection March 9. Observed container of food prepared and opened package of turkey with a date on them that exceeds 7 days in the refrigerator. Food shall be discarded if it has not been used within 7 days. Container of prepared food and opened turkey were pulled and discarded during the inspection. Observed single use containers being reused to store food in. Single use container should not be reused.

STAR BUCKS – ARAMARK, 1301 L.A. “Prexy” Davis Dr., Slot 4901. Date of inspection March 10. Observation: Observed counter top with an accumulation of food residue. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

STAR BUCKS – ARAMARK, 1301 L.A. “Prexy” Davis Dr., Slot 4901. Date of inspection March 10. Observation: Observed counter top with an accumulation of food residue. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

SHARK BITES CAFE-SEARK, 1900 S. Hazel St. Date of inspection March 10. Observed several cut/opened, prepared on site foods employee said has been held for more than 24 hours with no date marking. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Cut/opened prepared on site foods were date marked during the inspection. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be covered when not in continuous use.

PINE BLUFF COUNTRY CLUB, 1100 Country Club Lane. Date of inspection March 10. Observed raw beef being stored above raw fish in the prep cooler across from the cooking area. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Observed food in the coolers being stored uncovered. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Observed food manager said was that was prepared on site more than 24 hours ago not date marked. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Observed an accumulation of dust/debris on the ceiling, ceiling vents, and speaker on the ceiling. Clean the physical facilities as often as necessary to keep them clean. Observed floors, especially under the cooking equipment, shelves, and refrigeration units, that are unclean. Clean the physical facilities as often as necessary to keep them clean. Observed an accumulation of grease/food residue on the vent hood filters. Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials.

COLEMAN ELEMENTARY SCHOOL, 4600 W. 13th Ave. Date of inspection March 10. Observed paper cups stored directly on floor in stored area. Single service items should be stored 6 inches above the floor to be in accordance to regulations. Paper cups was removed during time of inspection.

CFA – ARAMARK, 1301 L.A. “Prexy” Davis Dr., Slot 4901. Date of inspection March 10. Observed improper thawing method. TCS foods shall be thawed using an approved method. Corrected during time of inspection.

MS DEES DINER, 620 S. Poplar St. Date of inspection March 11. Observed potatoes stored directly on floor. Food must be stored 6 inches above the floor to be in compliance with established regulations.
