Food Safety June 8

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

KYLAN’S KITCHEN, 2221 S Olive St. Ste J C. Date of inspection May 29. Floors in the mop and grease bucket storage area are unclean. Clean the physical facilities as often as necessary to keep them clean.

J&T FOOD AND CATERING mobile, 35 Shirley St. Date of inspection May 29. Butter (70 degrees F) in the refrigerator is not in safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Hot water is not working. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHMENT. Mobile unit is not in operation during time of inspection. Owner asked for two weeks to make corrections on the food truck. The food truck is not being used and she said has not been used since November 2024. Corrections should be made to violations noted before opening next.

OCEANS FISH AND CHICKEN, 2611 W. 28th Ave. Date of inspection June 2. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed no sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Hand-washing sign was given during time of inspection. Observed boxes stored directly on floor in walk-in freezer. Food must be stored six inches above the floor to be in compliance with established regulations. Observation: Observed an accumulation of food residue on walls in establishment. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Observed floors unclean in kitchen area. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

OCEAN FISH & CHICKEN DOLLARWAY, 4607 Dollarway Road. Date of follow-up inspection June 3. No violations reported.

AMECA MEXICAN RESTAURANT, 7401 Dollarway Road, White Hall. Date of inspection June 4. Observed containers of food in the walk-in cooler, in refrigerator, and on the shelves that are being stored uncovered when not in use. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Cut onions (73 degrees F) and pork (75 degrees F) on a counter top in the kitchen are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed an insect in the rice on the hot bar. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions. Rice was discarded during the inspection. Observed trash cans containing food residue being kept uncovered when not in continuous use. Trash cans should be kept covered during the inspection.
