Food Safety June 23

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

COLONIAL STEAK HOUSE, 111 W. Eighth Ave. Date of inspection June 10. Single service items observed in establishment being reused. Single service containers should not be reused. The restroom door in the kitchen area is not self-closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door.

MOMMA’S DINER, 3015 W. 28th Ave. Date of inspection June 6. Spaghetti (42 degrees F) and roast (43 degrees F) in the reach in refrigerator is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed some damaged ceiling tiles in the dry storage area. The PHYSICAL FACILITIES shall be maintained in good repair.

ADC-PINE BLUFF WORK COMPLEX, 890 Freeline Drive. Date of inspection June 11. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. The maximum temperature of the automatic dishwasher from the Plate Simulating Dishwasher Tester was 108 degrees F. The temperature of the fresh hot water SANITIZING rinse as it enters the manifold may not be more than 90°C (194°F), or less than: (1) For a stationary rack, single temperature machine, 74°C (165°F); or (2) For all other machines, 82°C (180°F). Maintenance said that a part has been ordered but not approved yet. The kitchen manager agreed that until that part is repaired the dishes would be manually sanitized. Cut onions (49 degrees F) in the reach in prep cooler #1 and mayonnaise (48 degrees F) in the reach in prep cooler #2 are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. (B) C The dishwasher, nozzle on the vegetable sink, and pipe for filling pots for cooking in the kitchen are leaking and need to be repaired.

SAV-A-LOT GROCERY, 600 Ash St. Date of inspection June 17. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed boxes of cereal stored directly on floor. Food must be stored in compliance with established regulations. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observed paper products stored directly on floor. Must use single service items in accordance to regulations. Observation: Corrective Action: Observed missing ceiling tiles in establishment. The PHYSICAL FACILITIES shall be maintained in good repair.

SAM’S SOUTHERN EATERY, 1704 E. Harding Ave. Date of follow-up inspection June 20. Previous violations corrected at time of follow up inspection.

RANDALL L. WILLIAMS CORRECTIONAL FACILITY, 7206 W. 7th Ave./P.O. Box 6408. Date of follow-up inspection June 19. Walk in cooler has a sign reading “Out of Order.” Manager said no food is being stored in it. Food that was being stored in the walk in cooler was moved to the walk in freezer before inspection. Manager will call inspector when the walk in cooler is repaired.

FOOD SMART, 3101 W. 28th Ave. Date of follow-up inspection June 17. No violations reported.
