Food Safety July 14

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

ANARASH LLC-ATOMIC WINGS, 2506 W. 28th Ave. Date of opening inspection July 8. Observed some seasonings out of their original containers in bulk bins not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the food. Restroom doors in the establishment are not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door.

TERI FOODS INC., 902 River Road, Redfield. Date of inspection July 9. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Hand washing sign was given during time of inspection. Observation: Clean nonfood contact surfaces. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

SEARK EARLY CHILDHOOD DEVELOPMENT, 2200 S. Hazel St. Date of inspection July 9. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. No soap provided at the hand washing sink in the men’s restroom. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashing sink.

IRISH MAID DONUT, 2320 S. Blake St. Date of inspection July 9. Observed eggs not covered in cooler. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Eggs were covered during time of inspection.

I&E Sch Inc. dba SCHLOTZSKY’S, 7750 Sheridan Road, Suite D, White Hall. Date of follow-up inspection July 9. No violations reported. Time is being used as a public health control for foods not holding proper temperature in the prep table. A chart of discard times was available during the inspection.

Diced bell peppers (50 degrees F) and banana peppers (49 degrees F) in the prep table are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0 degrees F or below, as measured by an internal probe thermometer, to limit bacterial growth. Employees said they are using a 4-hour hold on the side of the prep cooler that is not holding safe temperatures until it can be repaired. Observed several flying insects throughout the kitchen. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions.

HAZEL GAS STOP, 2801 S. Hazel St. Date of inspection July 9. Facility lacks refrigerator thermometer. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. The restroom door is not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. Observed some damaged ceiling tiles throughout the store. The PHYSICAL FACILITIES shall be maintained in good repair.
