Food Safety Jan. 25

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

UNITED FOOD & GAS INC., 800 N. Bryant St., White Hall. Date of inspection Jan. 21. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed sugar not in original container. Food not in the original packages for use in Establishment must be identified with the common name of the Food. Corrected during time of inspection. Observation: Observed the wall near fryer with an accumulation of grease build-up. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Observed an accumulation of food debris on counter top. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

SHELL FOOD MART, 6708 Sulphur Springs Road. Date of inspection Jan. 21. Observed gizzards with no date marking. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Date was placed on gizzards during time of inspection. Observation: Observed an accumulation of grease on floor near the fryer. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

LA ESTRELLITA TIENDA MEXICANA, 3121 W. 28th Ave. Date of inspection Jan. 21. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed hand washing sink blocked. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Observed pork and peppers, not labeled. Label information shall include: (1) The common name of the FOOD, or an adequately descriptive identity statement, (2) a list of ingredients in descending order of predominance by weight (including any artificial colorings or preservatives), (3) An accurate declaration of the quantity of contents; and (4) The name and place of business of the manufacturer, packer, or distributor, And (5) The name of the FOOD source for each MAJOR FOOD ALLERGEN contained in the FOOD (unless the FOOD source is already part of the common or usual name of the respective ingredient). Food label was placed on food item during time of inspection.

OLIVE EXPRESS, 2202 S. Olive St. Date of inspection Jan. 22. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observation: Observed drink area with an accumulation of food residue. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

EAGLE EXPRESS, 2800 S. Olive St. Date of inspection Jan. 22. Observation: Observed trash can with no lid. Trash can should have a lid when not in continuous use. Observation: Observed drink area is unclean and needs to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean. Observation: Corrective Action: Observed missing floor tiles in establishment. The PHYSICAL FACILITIES shall be maintained in good repair. Observation: Observed old ice machine not working in should be removed from establishment. Corrective Action: The PREMISES shall be free of items that are unnecessary to the operation or maintenance of the establishment such as EQUIPMENT that is nonfunctional or no longer used and litter.

HAZEL GAS STOP, 2801 S. Hazel St. Date of inspection Jan. 21. Milk (46 degrees F) in the walk in cooler is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Milk was discarded during the inspection. Observed single service cups in the drink dispensing area being stored unprotected. Must be stored in original package and in a manner that prevents contamination. The restroom door is not self closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. The owner said that the milk is not supposed to be stored in the walk in cooler and that only beer and sodas should be stored in the walk in cooler.

HARDIN FOOD MART, 10900 Highway 270, White Hall. Date of inspection Jan. 21. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed sliced cheese out of the original packaging and wrapped individually to sell with no proper labeling. Label information shall include: (1) The common name of the FOOD, or an adequately descriptive identity statement, (2) a list of ingredients in descending order of predominance by weight (including any artificial colorings or preservatives), (3) An accurate declaration of the quantity of contents; and (4) The name and place of business of the manufacturer, packer, or distributor, And (5) The name of the FOOD source for each MAJOR FOOD ALLERGEN contained in the FOOD (unless the FOOD source is already part of the common or usual name of the respective ingredient). Observed an opening at the bottom of the door in the back storage room. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed single serve cups and straws being stored uncovered and not protected by packaging. Must be stored in original package and in a manner that prevents contamination. Observed several damaged ceiling tiles throughout the establishment. The PHYSICAL FACILITIES shall be maintained in good repair.
