Food Safety Jan. 18

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

E-Z MART, 5401 Dollarway Road. Date of inspection Jan. 15. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed an accumulation of debris on counter top. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

DUB BRASSELL ADULT DETENTION, 300 E. Second Ave. Date of inspection Jan. 15. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed an accumulation of dust on the back of the personal fan near the automatic dishwasher. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. No hot water observed at the hand washing sink nearest the automatic dishwasher. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHMENT. Maintenance repaired the hand washing sink handle so that the hot water was available during the inspection.

DOLLAR GENERAL, 4109 U.S. 65 South. Date of inspection Jan. 15. Observed an opening in the middle of the front doors. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed several parts of the walls in the dry storage room damaged with insulation coming out of the wall. The PHYSICAL FACILITIES shall be maintained in good repair. Observed 0 footcandles of light in the restroom. At least 20 foot candles of light is needed at a distance of 30 inches above the floor in the restroom.

DOLLAR GENERAL, 1414 E. Harding Ave. Date of inspection Jan. 15. The shelves and bottoms of several coolers and freezers are visibly soiled. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

DAYS INN, 406 N. Blake St. Date of inspection Jan. 15. Observed no hand soap at hand washing sink. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashing sink. Corrected during time of inspection.
