Food Safety Jan. 11

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

THE CAJUN FRIED HOUSE, 3007 S. Olive St. Date of inspection into complaint Jan. 6, 2026. Inspection focused on Complaint #16279 only. No violations reported.

THE CAJUN FRIED HOUSE, 3007 S. Olive St. Date of inspection Dec. 5, 2025. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed soap and brushes being stored in the hand washing sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Brushes and soap were removed from the hand washing sink during the inspection. Observed containers of food being stored uncovered in the prep cooler. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Containers of food were covered during the inspection. Observed openings from the outside under the doors in the dry storage area and the back door by the walk in freezer. All outer openings of a food establishment should be protected against the entry of insects and rodents Observed some containers of food being stored directly on the floor in the walk in cooler and freezer. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor. Observed used wiping cloths sitting on the counter tops in the kitchen. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment.

HOLIDAY INN EXPRESS, 7800 Sheridan Road, White Hall. Date of inspection Jan. 7, 2026. The small refrigerator in the breakfast room has an ambient temperature of 55 degrees F. No food product is observed in the small refrigerator during the inspection. Before time/temperature sensitive food is held in the refrigerator it should read 41 degrees F or below. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed trash cans containing food residue being kept uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.

WAL MART SUPERCENTER– DELI/BAKERY, 5501 Olive St. Date of follow-up inspection Jan. 7. The maximum temperature of the automatic dishwasher as read on the Dishtemp Plate Simulating Dishwasher Tester was 151.8 degrees F. The temperature of the fresh hot water SANITIZING rinse as it enters the manifold may not be more than 90°C (194°F), or less than: (1) For a stationary rack, single temperature machine, 74°C (165°F); or (2) For all other machines, 82°C (180°F). Manager said that all dishes would be manually sanitized until the automatic dishwasher can be repaired to properly sanitize.

WAL MART SUPERCENTER– DELI/BAKERY, 5501 Olive St. Date of follow-up inspection Jan. 6. The maximum temperature of the automatic dishwasher as read on the Dishtemp Plate Simulating Dishwasher Tester was 146.7 degrees F. The temperature of the fresh hot water SANITIZING rinse as it enters the manifold may not be more than 90°C (194°F), or less than: (1) For a stationary rack, single temperature machine, 74°C (165°F); or (2) For all other machines, 82°C (180°F).

WENDY’S, 2910 Pines Mall Drive. Date of follow-up inspection Jan. 5. Observed trash cans containing food residue in the kitchen being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.

REDFIELD TRUCK STOP-ZAIMA ENTERPRISES LLC, Highways 65 and 46, Redfield. Date of follow-up inspection Jan. 5. All violations pertaining to complaint were corrected during time of inspection. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM.

SUBWAY REDFIELD, 1017 Sheridan Road, Redfield. Date of inspection Jan. 5. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Hand washing sink was blocked. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Bucket was removed during time of inspection.
