Food Safety Feb. 16

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

SAPACH LLC “SUBWAY,” 1620 S. Main St. Date of follow-up inspection Feb. 10. Turkey (49 degrees F) and black olives (48 degrees F) in the walk in cooler is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Owner said that a coil was replaced on the walk in cooler and the unit had to be turned off to defrost and turned back on.

SAPACH LLC “SUBWAY,” 1620 S. Main St. Date of inspection Feb. 6. Sliced cucumbers (48 degrees F) and tuna (49 degrees F) in the walk in cooler is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

SAHARA SHRINE CENTER, 820 S. Main St. Date of inspection Feb. 10. Observed an accumulation of debris on the flooring under the fryers in the kitchen. Clean the physical facilities as often as necessary to keep them clean.

LITTLE FIREHOUSE DAYCARE,: 2911 W. 13th Ave. Date of inspection Feb. 10. Establishment needs at least service or 1 curbed cleaning facility equipped with a floor drain shall be provided and conveniently located for the cleaning of mops or similar wet floor tools and for the disposal of mop similar liquid waste.

JUVENILE JUSTICE CENTER, 301 E. Second Ave. Date of inspection Feb. 10. Chlorine solution is reading 0ppm at the final rinse in the automatic dishwasher. A chlorine solution shall measure 50-100 mg/L at a temperature of 75°F-100°F. Three compartment sink should be used for sanitizing dishes until the automatic dishwasher can be repaired to properly sanitize. No test strips available during the inspection. Test strips must be available and used to test the strength of chemical sanitizing solutions. Permit posted is not current. It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.

The PERMIT HOLDER shall be the PERSON IN CHARGE or shall designate a PERSON IN CHARGE and shall ensure that a PERSON IN CHARGE is present at the RETAIL FOOD ESTABLISHMENT during all hours of operation. Observed cracker and cookies not in original (packages.) Food not in the original packages for use in Establishment must be identified with the common name of the food. Observation: Observed drink area unclean and and needs to be cleaned. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed missing and broken floor tiles in establisment. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. Observation: Current health permit is expired.
