Food Safety Feb. 15

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

THE COFFEE COMPANY-PINE BLUFF, 3112 N. Midland Drive. Date of opening inspection Feb. 13. No hand washing sink observed in the kitchen. Provide handwash sinks as necessary for convenient use by employees in food preparation and warewashing areas and toilet rooms. Restroom door is not self-closing. A toilet room located on the PREMISES shall be completely enclosed and provided with a tight-fitting and self-closing door. Flooring material in the kitchen is carpet. Flooring is not smooth and easy to clean.

REEF-GREAT WESTERN DINING, 6811 S. Hazel St. Date of follow-up inspection Feb. 13. Observed several damaged or missing floor tiles in the kitchen and warewashing area. The PHYSICAL FACILITIES shall be maintained in good repair. The refrigerator that was not holding proper temperatures is no longer being used.

REEF-GREAT WESTERN DINING, 6811 S. Hazel St. Date of inspection Feb. 10. Observed O ppm of sink and surface sanitizer in the sanitizing basin of the three compartment sink. Sanitizer is not dispensing correctly through the tubing. If a chemical SANITIZER other than chlorine, iodine, or a quaternary ammonium compound is used, it shall be applied in accordance with the EPA-registered label use instructions. Sink and surface sanitizer was manually added during the inspection. Observed 0ppm of chlorine in the automatic dishwasher at the end of the cycle. A chlorine solution shall measure 50-100 mg/L at a temperature of 75°F-100°F. Sanitizer was replaced during the inspection and it read 50ppm at the end of the cycle. Diced eggs (58 degrees F) in the glass door reach in refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Diced eggs and other time/temperature sensitive foods were being discarded during the inspection. Observed liquid waste in the cabinets storing the soda boxes. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Liquid waste was cleaned during the inspection. Observed several damaged or missing floor tiles in the kitchen and warewashing area. The PHYSICAL FACILITIES shall be maintained in good repair.

P.B. CORNER MARKET LLC, 2118 W. 13th Ave. Date of inspection Feb. 13. Observed no hand washing sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all handwashing sinks used by food workers and shall be clearly visible to food workers. Observed no date marking on deli meats. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Observation: Observed counter top and sink unclean and needs to cleaned. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Observed ceiling tile and walls not in good repair. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair.

LITTLE CAESARS, 5801 Dollarway Road, Ste B. Date of inspection Feb. 13. Observed used wiping cloths being stored on the counter tops between use. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Shelving across from the three compartment sink is visibly soiled. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

LITTLE CAESAR’S, 2300 W. 28th Ave. Date of follow-up inspection Feb. 13. Observed a leak in the faucet of the three compartment sink with a wiping cloth around it. The faucet should be repaired or replaced so that it does not leak. Observed shelving holding can goods and dishes that are visibly soiled. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

LITTLE CAESAR’S, 2300 W. 28th Ave. Date of inspection Feb. 10. Observed chicken out of the original package on a pan in the walk in cooler exposed to leaking water off of a pipe. Food shall only contact surfaces of equipment and utensils that are cleaned and sanitized or single service/use articles. Chicken was discarded during the inspection. Observed packages of food product exposed to dripping water from a pipe in the walk in cooler. Packaged food shall not be stored in direct contact with ice or water. Packages of food product were moved around in the walk in cooler where they are no longer exposed to the dripping water. Observed used wiping cloths being stored on the counter tops in the kitchen. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observed a leak coming from a pipe in the walk in cooler. The pipe in the walk in cooler should be repaired so that it does not leak. Observed a leak in the faucet of the three compartment sink with a wiping cloth around it. The faucet should be repaired or replaced so that it does not leak. Observed shelving holding can goods and dishes that are visibly soiled. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed an accumulation of liquids on the walk in cooler floor. Condensate drainage and other non-sewage liquids and rainwater shall be drained from point of discharge to disposal according to law.

DOLLAR GENERAL STORE, 8605 Dollarway Road, White Hall. Date of inspection Feb. 13. Tea (44 degrees F) that says “Keep Refrigerated” on the bottle is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

COMFORT INN & SUITES, 3620 Camden Road. Date of follow-up inspection Feb. 13. All violations corrected during time of inspection.

Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Eggs and biscuits were discarded during time of inspection. Observed no date on eggs during time of inspection. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. Eggs were discarded during time of inspection.
