Inspections are made unannounced by environmental health specialists.

SWEET CHARLIEMAYS CAFE — mobile, 2514 E. Harding Ave. Date of follow-up inspection Nov. 27. Facility lacks refrigerator thermometer. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. No test strips observed in mobile unit. Test strips must be available and used to test the strength of chemical sanitizing solutions. Mobile unit not in operation during follow up inspection. Test strips and thermometer should be provided before next use of mobile unit.

WENDY’S, 2909 W. 28th Ave. Date of inspection Nov. 27. Ice cream mix (49 degrees F) in the vanilla ice cream machine is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Manager put a 4 hour hold time on the ice cream mix so the ice cream mix will be discarded every 4 hours if not used. Manager also put a ticket in to have the ice cream machine repaired. Observed an accumulation of food debris on the bottom of the prep cooler and the stand up freezer. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Maintenance was on site during the inspection to fix the door seals and replace a part on the ice cream cooler to repair it.

The ice cream mix was pulled to be discarded during the inspection. Doors for the ice cream cooler and prep cooler are not sealing properly. Door seals should be repaired or replaced so that the doors seal properly to maintain safe temperatures. Observed a nozzle missing on the rinse and sanitize basins of the three compartment sink. The three compartment sink should be replaced with a working nozzle.
