Food Safety Dec. 7

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

TACO BELL, 3501 Camden Road. Date of inspection Dec. 3. Observed trash can with no lid. Trash cans should have lid when not in continuous use, or contains food residue.

MEXICO LINDO TAQUERIA MAIN ST., 601 S. Main St. Date of inspection Dec. 3. Observed raw meat in the reach in freezer being stored above vegetables. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Raw vegetables were moved to the top shelf of the freezer during the inspection.

FREEMAN’S ONE STOP, P.O. BOX 43, Tucker. Date of inspection Dec. 3. Keep thermometers visible in refrigerators to be sure temperatures stay below 41 degrees. Observation: walls soiled with grease residue. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

DOC – TUCKER, 2400 State Farm Road. Date of inspection Dec. 3. Dish machine max temperature 146 degrees. Must be at least 160 degrees when water hits the trays. Sanitize wares in after washing in the 3 bay sink using at least 50ppm chlorine until dish machine is repaired.

DOC – MAX UNIT, 2501 State Farm Road, Tucker. Date of inspection Dec. 3. Floor in disrepair at kettle drains and under dish machine. Vent hood not pulling all steam from kettles.

DELTA – ARAMARK, 1701 S. Spruce St. SLOT 4901. Date of inspection Dec. 3. Observed wiping cloths laying on counter top. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment.

UNDERWATER SEAFOOD LLC, 1400 S. Main St. Date of inspection Dec. 4. Observed improper thawing process. TCS foods shall be thawed using an approved method. Food was placed in cooler during time of inspection.

SOUTHERN CONNECTION SEAFOOD, 362 Acoma Road. Date of inspection Dec. 4. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Keep soap and paper towels at hand sink. Keep thermometers in all food coolers to be sure temperatures stay below 41 degrees. Use a probe thermometer to check cooking temperatures. Observation: Get chlorine test strips if using bleach to sanitize. Sanitizing solution in 3rd sink is to be 50-100ppm chlorine. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.

CHARROS, 2500 Olive St. Date of inspection Dec. 4. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed some containers of diced tomatoes and tamales in the refrigerator held for more than 24 hours not date marked. Food prepared and held for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold or discarded for a maximum of 7 days. The containers of the diced tomatoes and tamales were date marked during the inspection.
