Jefferson County Food & Safety Report Dec. 31

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

MOMMA’S DINER, 3015 W. 28th Ave. Date of inspection Dec. 15. Observed used wiping cloths sitting on counter tops. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Wiping cloths were moved to a bucket of sanitizer water during the inspection.

ARBY’S, 5507 S. Olive St. Date of inspection Dec. 18. Observation: Walls are soiled in kitchen area. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Observed trash can with no lid. Trash cans must have lids when not in continuous.

COLONIAL STEAK HOUSE, 111 W. Eighth Ave. Date of inspection Dec. 5. Beets and diced onions (44° F) in the salad bar cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0° F or below, as measured by an internal probe thermometer, to limit bacterial growth. Single service items observed in establishment being reused. Single service containers should not be reused. Ansul system has a build up of residue on it. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Walls in the kitchen by the fryers are visibly unclean. Clean the physical facilities as often as necessary to keep them clean.

COLONIAL STEAK HOUSE, 111 W. Eighth Ave. Date of follow-up inspection Dec. 18. Single service items observed in establishment being reused. Single service containers should not be reused.

MCDONALD’S, 3610 Camden Road. Date of inspection Dec. 18. Food workers shall wear hair restraints, beard restraints, and clothing that covers body hair. Correct on site. Observed paper products stored directly on floor. Must use single service items in accordance to regulations.

SONIC DRIVE IN, 3410 Camden Road. Date of inspection Dec. 18. Observation: Observed improper drinking. (Specific observation here) Corrective Action: Discontinue consuming food, use of unapproved beverage containers, or use of tobacco in food preparation or warewashing area. Correct on site. Observed wiping cloths laying around establishment. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment.

CHINA GARDEN BUFFET, 7203 Sheridan Road, Suite N and O, White Hall. Date of inspection into complaint Dec. 15. No violations pertaining to complaint during the inspection.

LEMUS STORE LLC, 11001 S. Highway 88, Altheimer. Date of inspection Dec. 15. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observation: Observed trash can with no lid. Trash can must have a lid when not in continuous.

LEON’S CATFISH & SHRIMP, 3801 Camden Road, Suite 18. Date of inspection Dec. 15. 56 6-501.13 C Observation: Vent hood needs to cleaned.
