Food Safety Dec. 28

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

BF Seafood INC., 401 N. Blake St. Date of inspection Dec. 19. Observed: No handwashing sign over sink in kitchen/restroom area. Must have a sign or poster that notifies food workers to wash their hands at all handwashing sinks used by food workers and shall be clearly visible to food workers. Observed: Seasoning containers with no label. Food packaged in Retail Food Establishment, shall be labeled as specified in law. Observed: Small opening on the side of the back door, place door seal to prevent insect entry. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed: Boxes of food on the floor in the walk in cooler and walk in freezer. Food must be stored in compliance with established regulations. Observation: Ice build-up around the door seal of the walk in freezer. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Restroom doors are not self-closing. Corrective Action: Toilet room doors shall be kept closed except during cleaning and maintenance operations. Observation: Floors have some food debris and need cleaning. Clean as necessary to keep clean.

COLTON’S STEAK HOUSE & GRILL, 8529 Sheridan Road, White Hall. Date of inspection into complaint Dec. 22. Report doesn’t detail complaint or remedy.

CHILI’S, 5511 Olive St. Date of inspection Dec. 22. Did not find thermometers in some coolers. Keep them visible. One food handler has no effective hair restraint. Observation: Food debris under and between some equipment. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

CHICK-FIL-A, 5701 S. Olive St. Date of follow-up inspection Dec. 22. No violations reported.

BIG BANJO PIZZA PARLOR, 4208 W. 28th Ave. Date of inspection Dec. 16. Observed hand washing sink blocked. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Corrected during time of inspection. Observed boxes stored directly on floor. Food must be stored six inches above the floor to be in compliance with established regulations.

WOOD SHED, 9621 Highway 270, White Hall. Date of inspection Dec. 17. Observed bulk bins of seasonings in small, unlabeled containers. Food not in the original packages for use in Establishment must be identified with the common name of the food. Containers were labeled during the inspection.

WENDY’S, 2910 Pines Mall Drive. Date of follow-up inspection Dec. 17. Caesar dressing (45 degrees F) and sliced onions (47 degrees F) in the prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Time in being kept on some time/temperature control for safety (TCS) foods on the line. Time should be kept on all TCS foods and discarded after 4 hours until the line can be repaired to maintain internal temperature of food at 41 degrees F or below. TCS foods in the cooler below with no time kept should be moved to another cooler. Observed trash cans containing food residue in the kitchen being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.

WALMART SUPERCENTER deli/bakery, 5501 Olive St. Date of inspection Dec. 17. The maximum temperature of the automatic dishwasher as read on the Dishtemp Plate Simulating Dishwasher Tester was 147.8 degrees F. The temperature of the fresh hot water SANITIZING rinse as it enters the manifold may not be more than 90°C (194°F), or less than: (1) For a stationary rack, single temperature machine, 74°C (165°F); or (2) For all other machines, 82°C (180°F).

SUPER 1 FOODS deli, 2721 Camden Road. Date of inspection Dec. 17. Observation: containers with accumulation of food residue. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Nozzle on 3 compartment sink has a leak and continuously runs. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. Observation: Walls are heavily soiled. Clean as necessary to keep clean.

SUPER 1 FOODS, 2721 Camden Road. Date of inspection Dec. 17. Observation: Ice build in some of the ice cream freezer unit. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Hand sink in produce room is continuously running. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. Observation: Lighting out in walk in freezer, maintenance is currently working on to repair. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair.
