Inspections are made unannounced by environmental health specialists.

FOOD SMART, 3101 W. 28th Ave. Date of inspection Dec. 7. Some parts of the ceiling and walls in the meat department are visibly unclean. Clean the physical facilities as often as necessary to keep them clean. Some ceiling tiles are damaged in the dry storage area. The PHYSICAL FACILITIES shall be maintained in good repair.

JIMMY PHIL’S SMOKE WAGON – mobile, 214 N. Highway 365, Redfield. Date of inspection Dec. 7. Observed chips stored directly on floor. Food must be stored six inches above the floor to in compliance with established regulations.
LYBRAND’S TOO, 6201 Dollarway Road. Date of Dec. 7. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed an opening at the bottom of the back door. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed an accumulation of debris on the cooking equipment and shelving in the kitchen. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Some ceiling tiles in the kitchen area are damaged or missing. The PHYSICAL FACILITIES shall be maintained in good repair.
McDONALD’S, 8012 Sheridan Road, White Hall. Date of inspection into complaint Dec. 7. No violations pertaining to complaint during inspection.
RED LOBSTER, 3000 Pines Mall Drive. Date of follow-up inspection Dec. 7. No violations reported.
ARKANSAS DEPARTMENT OF CORRECTION – ESTER UNIT, 7500 Correction Circle. Date of inspection Dec. 5. Chicken broth (43°F) and sweet potatoes (45°) were out of a safe temperature range in the walk-in cooler. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.
