Food Safety Aug. 25

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

THUNDER ROLLS BOWLING CENTER, 1600 E. Harding Ave. Date of inspection July 30. Jalapenos (44 degrees F), ranch dressing (48 degrees F), and mushrooms (45 degrees F) in the reach in refrigerator closest to the fryers are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0 degrees F or below, as measured by an internal probe thermometer, to limit bacterial growth. The outside of the grill under the vent hood has a build up of residue on it. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Floors in the dry storage/ware washing room, especially by the soda dispensing area, are unclean. Clean the physical facilities as often as necessary to keep them clean.

SUBWAY, 3705 Camden Road. Date of inspection July 30. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observation: Observed trash cans with no lids. Trash cans should have lids when not in continuous use and contain food debris.

SNACK CITY-PINE BLUFF, 100 N. Walnut St. Date of inspection July 30. Observed a container of white substance near the coffee station not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the food. Observed three compartment sink being used for storage. Three compartment sink should be cleaned to use for properly washing, rinsing, and sanitizing dishes.

HOLIDAY INN EXPRESS, 2903 Pines Mall Drive. Date of inspection July 30. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed no handwashing sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all handwashing sinks used by food workers and shall be clearly visible to food workers. Hand washing sign was given during time of inspection. Observation: Observed counter top with an accumulation of food debris. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed light bulb in refrigerator not covered. Light bulb shall be covered/protected to prevent contamination.

CAM PIZZA LLC – (DBA DOMINO’S), 2300 S. Olive St. Date of follow-up inspection Aug. 8. A new prep cooler is being ordered. No food was in the the prep cooler during the inspection.
