Food Safety April 6

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

HR FOOD MART, 201 Edline, Altheimer. Date of inspection April 1. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed no paper towels at hand washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Observed no soap at handwashing sink. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashing sink. Observation: Observed soil walls throughout establishment. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observation: Observed missing ceiling tiles throughout establishment. Observation: Establishment needs a general cleaning. Corrective Action: Clean the physical facilities as often as necessary to keep them clean. Observation: Floors are unclean and needs to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

HUDDLE HOUSE, 7735 Sheridan Road, White Hall. Date of inspection March 28. Butter and ranch dressing (47 degrees F) in the glass door refrigerator is out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed several trash cans containing food residue being stored uncovered in the kitchen. Trash cans containing food residue should be kept covered when not in continuous use. Also, complaint inspected April 1. No violations observed pertaining to complaint at the time of inspection.

HUDDLE HOUSE, 7735 Sheridan Road, White Hall. Date of inspection follow-up inspection April 1. The refrigerator was turned off and empty during the inspection. Appliance repair company came in during the inspection to turn it back on. They report that it was frozen and had to turn it off to defrost it overnight. Refrigerator temperature should be 41 degrees F or below before placing food back in it.

MILL TOWN COFFEE CO., 7003 Dollarway Road, Ste 2, White Hall. Date of inspection March 28. Pasta salad and cut onions (43 degrees F) are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed several trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.

MILL TOWN COFFEE CO., 7003 Dollarway Road, Ste 2, White Hall. Date of inspection March 28. No items observed in the glass door refrigerator during the inspection. Manager said that a part was ordered for the refrigerator. Refrigerator should reach temperatures of 41 degrees F or below before food is placed back into it.
