Inspections are made unannounced by environmental health specialists.

TACOS Y DELICIAS ALMIS LLC, mobile, 407 N. Blake St. Date of inspection April 22. Active managerial controls to maintain food safety not observed during time of inspection. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Beans (131 degrees F) in the warmers are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Sliced onions (49 degrees F) and beans (59 degrees F) in the prep cooler and sour cream (55 degrees F) in the small cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. No running water available on the mobile during the inspection. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHMENT. Permit is not current. It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law. Establishment closed by manager after inspection. Establishment should not reopen for business until running water is available in the food truck and refrigerators can maintain food at 41 degrees F or below. Food should not be stored in refrigerators at home daily and brought to the food truck. Food truck should be provided with working refrigeration units to keep foods at 41 degrees F or below.

CHEF LEE, 502 Mallard Loop. Date of inspection into complaint April 16. The manager did not demonstrate knowledge of foodborne disease prevention when questioned. The PERSON IN CHARGE shall demonstrate to the REGULATORY AUTHORITY knowledge of foodborne disease prevention, application of the HAZARD Analysis CRITICAL CONTROL POINT principles, and the requirements of the Rules and Regulations Pertaining to Food Establishments. Observed containers of raw meat product being stored above ready to eat food in the walk in cooler. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Observed shell eggs and raw chicken being sat out after delivery at ambient temperatures. Cooling shall be accomplished in accordance with the time and temperature criteria using effective methods. Observed insects in the kitchen area. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions. Observed sticky fly traps used above food prep areas. Insect control devices are designed to retain the insect within the device, not be located over a food prep area and in a manner that prevents dead insects and insect fragments from getting into food, equipment, utensils, and linens and unwrapped single-service and single-use articles 4/23/2025 38 6-202.14 C Observed openings in the back screen door. All outer openings of a food establishment should be protected against the entry of insects and rodents. Observed several food items in containers or boxes in the prep area and in the walk in coolers being stored directly on the floor. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor. No test strips for chlorine sanitizer observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Observed an accumulation of grease and debris on the cooking equipment in the facility. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed an accumulation of grease and debris over the floors, walls, and ceilings. Clean the physical facilities as often as necessary to keep them clean.
AAASEA Central Kitchen, 211 W. Third Ave., Ste 250. Date of inspection April 22. Observed drink with lid or straw. A closed BEVERAGE container if the container shall be handled to prevent contamination of: (1) The EMPLOYEE’S hands; (2) The container; and (3) Exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. Drink was discarded during time of inspection.
