Food Safety April 21


The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

Here are recent reports:

THE FAMILY DINER, 116 S Highway 365, Redfield. Date of inspection April 10. Observation: Corrective Action: Observed missing floor tiles in establishment. The PHYSICAL FACILITIES shall be maintained in good repair. Observation: Floors around kitchen equipment has a accumulation of grease and dirty. Corrective Action: Clean the physical facilities as often as necessary to keep them clean. Observation: Vent hood has accumulation of grease and residue. Nonfood surfaces shall be cleaned as necessary to keep clean.

THE FAMILY DINER, 116 S Highway 365, Redfield. Date of follow-up inspection April 18. All violations corrected during time of follow-up inspection.

LA XIMENITA LATIN MARKET, 2212 S. Blake St. Date of inspection April 15. Observed no paper towels at hand washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Corrected on site. Observation: The women’s restroom needs a lid on the trash can.

SHELL QUICK MART GGHA LLC, 7001 Sheridan Road. Date of inspection April 15. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. Observed bottles of orange juice (66 degrees F) sitting out in the back storage area that had “Keep Refrigerated” on the bottles and cheese (57 degrees F) in the display cooler out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0 degrees F or below, as measured by an internal probe thermometer, to limit bacterial growth. Bottles of orange juice and the whole meat/cheese display were pulled to be discarded during the inspection. The owner said that they were waiting on someone to come fix the cooler. Cooler should be 41 degrees F or below before placing food back in it. Observed used wiping cloths being stored on the counters and floor. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observed a build up of debris on the vent hood. Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, or other materials.

DAIRY QUEEN, 7810 Sheridan Road, White Hall. Date of inspection April 12. Observed a pan of raw bacon being stored above a box of pretzels in the small prep cooler. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. The pan of raw bacon was moved to another prep cooler during the inspection. Sliced cheese (43 degrees F) and chili (44 degrees F) in the prep cooler in the ware washing area are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0 degrees F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.
