Jefferson County Food & Safety Report

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

HAZEL FINE DELI GROCERY, 2510 S. Hazel St. Date of inspection Dec. 2. Observed hand washing sink blocked in the kitchen area. A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Items from the hand washing was removed during time of inspection. Food not in original containers are not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the Food. Facility lacks test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Display cooler needs cleaning. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Some equipment in the kitchen area not being used. Corrective Action: The PREMISES shall be free of items that are unnecessary to the operation or maintenance of the establishment such as EQUIPMENT that is nonfunctional or no longer used and litter. Observation: Observed missing floor tiles in the food prep area. Floor shall be maintained in good repair for easy cleaning. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. Observation: No current health permit posted. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.

HAZEL FINE DELI GROCERY, 2510 S. Hazel St. Date of follow-up inspection Dec. 4. All violations were corrected during time of inspection.

CATERING BY SCOTT RAY, 9231 Highway 270, White Hall. Date of inspection Dec. 3. Observed boxes of food in walk-in freezer being stored on the ground. Food in boxes should be stored at least 6 inches off of the ground.

CATERING BY SCOTT RAY mobile, 9231 Highway 270, White Hall. Date of inspection Dec. 3. Three compartment sink is unclean and needs to be cleaned. Floors in establishment are unclean and need to be cleaned.

DOLLAR GENERAL STORE, 4119 Camden Road. Date of inspection Dec. 3. Observed no paper towels at hand washing sink. Corrective Action: Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas.

POPEYE’S LOUISIANA KITCHEN, 3411 S. Camden Road/120 Commerce Drive. Date of inspection Dec. 3. Observed food residue in the hand washing sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Observed boxes of food stored on the floor in freezer. Food must be stored six inches above the floor. Food Shall be stored in compliance with established regulations. Boxes was removed during time of inspection.

SANDY ACRE GROCERY, 9225 Highway 270, White Hall. Date of inspection Dec. 3. Observed raw beef being stored above cheese, mustard, and cooked gizzards in reach in cooler. Raw meats should be stored below ready to eat foods. Raw beef was moved below ready to eat foods during inspection. Observed margarine in walk in cooler that was being contaminated by water dripping from the walk in cooler fan. Margarine was discarded during inspection. Observed opened deli meat in cooler that was held for more than 24 hours. Date marking needed on food prepared on site or opened commercial containers held for more than 24 hours. Deli meats were date marked during inspection. Observed a leak in the fans in the walk in cooler. Walk in cooler equipment should be repaired so that it does not leak. Some flooring in kitchen, especially under cooking equipment, is unclean and needs to be cleaned. Some ceiling tiles throughout establishment, especially in kitchen area and restrooms, are damaged and need to be replaced. Some flooring in kitchen is damaged and needs to be replaced.

TRINITY TEMPLE CHURCH, 800 S. Catalpa St. Date of inspection Dec.

  1. No current health permit posted. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law. Corrected during time of inspection.

WHITE HALL FOOD EXPRESS, 8003 Sheridan Road, White Hall. Date of inspection Dec. 3. Chicken (108 degrees F) in hot box was out of safe temperature range. Time/ Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Employee said that chicken had just been put in there so he reheated the chicken to 202 and 173 degrees F. Cabinet shelves where slush mix is being stored is unclean and needs to be cleaned. Floors under the shelves, cooking equipment, and rubber mat in kitchen area are unclean and need to be cleaned. Observed towels on floor next to fryers. Absorbent materials should not be used on floors.

COLONIAL STEAK HOUSE, 111 W. Eighth Ave. Date of inspection Dec. 1. Sanitizer not detected in automatic dishwasher. A chlorine solution shall measure 50-100 mg/L at a temperature of 75°F-100°F. Single service items observed in establishment being reused. Single service containers should not be reused. Some drawers in kitchen are unclean and need to be cleaned.

COUNTRY KITCHEN, 4322 Dollarway Road. Date of inspection Dec.

  1. Chlorine solution is not dispensing properly to sanitize the dishes in the automatic dishwasher. A chlorine solution shall measure 50-100 mg/L at a temperature of 75°F-100°F. Dishwasher was repaired so that the sanitizer properly dispenses. Observed residual build up on on ice machine deflector shield. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. Ice machine deflector shield was cleaned during inspection. Single service containers observed being reused throughout establishment. Single service containers should not be reused. Shelves in kitchen and dry storage area are unclean and need to be cleaned. Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue should be covered while not in continuous use. Floors throughout facility, especially under shelving and cooking equipment, are unclean and need to be cleaned.
