The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• WENDY’S, 2909 W. 28th Ave. Date of follow-up inspection March 23. Previous violations corrected at time of inspection.
• COUNTRY KITCHEN, 4322 Dollarway Road. Date of inspection March 19. Tuna (46 degrees F) and sausage (45 degrees F) in reach in refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed food prepared on site in refrigerators held for more than 24 hours and not date marked. Food prepared on site and held in refrigerator for more than 24 hours should be date marked and discarded after 7 days. Food was date marked during inspection. Observed boxes of food and packages of cabbage and onions being stored directly on the floor in the back walk in freezer and walk in refrigerator. Boxes of food should be stored at least 6 inches off of the ground. Single service containers observed being reused throughout establishment. Single service containers should not be reused. Seal on walk in freezer door is broken and needs to be repaired. Shelves in dry storage area are unclean and need to be cleaned. Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue should be covered while not in continuous use. Floors throughout facility, especially under equipment and shelving, is unclean and need to be cleaned. Clean the physical facilities as often as necessary to keep them clean.

• HARDEE’S, 2828 W. 28th Ave. Date of inspection March 19. Prep cooler door is not sealing properly. Door should be repaired so that it seals completely. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be covered when not in continuous use. Floors in kitchen area, especially under equipment and shelving, are unclean and need to be cleaned.
• LUCY MAE’S SOUTHERN FOODS, 6305 Dollarway Road, White Hall. Date of opening inspection March 19. Okay to operate — permit given.
• TERI FOODS INC., 902 River Road, Redfield. Date of inspection March 19. Observation: Facility lacks test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. NC Observation: Cooler is uncleaned and needs to be cleaned. Nonfood contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of food residues.
• ABC LEARNING ACADEMY, 6214 Dollarway Road. Date of inspection March 18. Food not in original container are not labeled. Food not in the original packages for use in Establishment must be identified with the common name of the food. Name was labeled during time of inspection.
• KLASSIC KIDS DAY CARE, 2407 S. Cherry St. Date of inspection March 18. Personal fans in kitchen are unclean and need to be cleaned.
• SMALLCAKES, 502 Mallard Loop, Suite J Loop. Date of inspection March 10. Observed containers of cake/brownie mix being stored directly on the floor. Containers of food should be stored at least 6 inches off of the floor.
• TOPPS TEENS, 1000 Townsend Park Drive. Date of inspection March 10. Observed no label on sugar. Food packaged in Retail Food Establishment, shall be labeled as specified in law. Sugar was labeled during time of inspection.
• Dollar General, 5104 Dollarway Road. Date of inspection Feb. 7. No paper towels supplied at hand washing sink in employee restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. No toilet tissue observed in customer restroom. A supply of toilet tissue shall be available at each toilet.
• Dollar General, 5104 Dollarway Road. Date of follow-up inspection Feb. 28. No hot water noted in establishment. Hot water generation and distribution systems shall by sufficient to meet the peak hot water demands throughout the retail food establishment.
