The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• KENTUCKY FRIED CHICKEN, 2707 W. 28th Ave., P.O. Box 789705. Date of inspection into complaint Jan. 13. No violations observed pertaining to complaint during inspection.
• KENTUCKY FRIED CHICKEN, 2707 W. 28th Ave., P.O. Box 789705. Date of inspection Jan. 13. No paper towels provided at back hand-washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware washing areas. Paper towels were provided during inspection. Observed an accumulation of food residue on cooking equipment, shelving, and counter tops (especially where food and drink machine are located). Nonfood contact surfaces should be cleaned at a frequency necessary to preclude accumulation of soil residues. Floors, walls, and ceilings in kitchen and floors in lobby area are unclean. Clean the physical facilities as often as necessary to keep them clean. Some floor tiles throughout kitchen are broken or missing. The physical facilities shall be maintained in good repair.

• DOLLAR GENERAL STORE, 3100 Olive St. Date of inspection Jan. 9. Observed packages of sugar being stored directly on the floor. Food packages should be stored at least 6 inches off of the floor. Some ceiling tiles throughout facility are damaged and need to be replaced.
• SANDY ACRES GROCERY, 9225 Highway 270. White Hall. Date of follow-up inspection Dec. 16. Observed raw beef above ready to eat food in reach in refrigerator. Raw meat should be stored below ready to eat food. Raw meat was placed on bottom shelf during inspection. Some flooring in kitchen is damaged and needs to be replaced.
• SANDY ACRES GROCERY, 9225 Highway 270. White Hall. Date of inspection into complaint Jan. 9. No violations pertaining to complaint during time of inspection.
• PRECIOUS MEMORIES TOO, 6022 Sheridan Road. Date of inspection Jan. 13. Observed zero foot candles in kitchen area. At least 540 lux at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicer, where employee safety is a factor.
• COUNTRY KITCHEN, 4322 Dollarway Road. Date of follow-up inspection Jan. 2. Sanitizer in automatic dishwasher is not dispensing properly to sanitize dishes. Coleslaw (53 degrees F), jelly (51 degrees F), and picante sauce (50 degrees F) in reach in refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed boxes of food being stored directly on the floor in the back walk in freezer. Boxes of food should be stored at least 6 inches off of the ground. Single service containers observed being reused throughout establishment. Single service containers should not be reused. Seal on walk in freezer door is broken and needs to be repaired. Shelves in dry storage area are unclean and need to be cleaned. Permit is expired. It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501 661-2171 to ensure that you are in compliance with the law.
• COUNTRY KITCHEN, 4322 Dollarway Road. Date of follow-up inspection Jan. 10. Observed boxes of food being stored directly on the floor in the back walk in freezer. Boxes of food should be stored at least 6 inches off of the ground. Single service containers observed being reused throughout establishment. Single service containers should not be reused. Seal on walk in freezer door is broken and needs to be repaired. Shelves in dry storage area are unclean and need to be cleaned.
• MAIN STREET FOOD MART, 1620 Main St. Date of inspection Jan. 8. No thermometer noted in walk in cooler and refrigerator holding milk. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Observed a hole in the wall in the back room. All outer openings of a food establishment should be protected against the entry of insects and rodents. Three compartment sink is visibly unclean and needs to be cleaned. Restroom door does not have a self closure. Restroom should be provided with a self-closing door. Some ceiling tiles throughout store are damaged or missing and need to be replaced. Some floors, especially under all equipment and shelving throughout store, are unclean and need to be cleaned. 0 foot candles of lighting observed in room with ice machine. More lighting needed in room with ice machine.
• AR DEPT. OF CORRECTION MAX UNIT, 2501 State Farm Road, Tucker. Date of inspection Jan. 7. Metal food strainers are in disrepair and need replaced. Metal fragments could break off in product. Strainer taken from rack during assessment. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: Ceiling in dish room rusty and floor near cooking kettles flaking up. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. Staff said vent system over kettles is still not working properly. Repair as to Arkansas HVAC regulations.
• AR DEPT. OF CORRECTION TUCKER, 2400 State Farm Road, Tucker. Date of inspection Jan. 7. Observation: Inmates had two trays of food and two uncovered drinks at food preparation table. Corrective Action:Discontinue consuming food, use of unapproved beverage containers, or use of tobacco in food preparation or ware-washing area. Food service Manager addressed the violation with inmates. Observation: Ceiling tiles missing over dish machine. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair.
• DOLLAR GENERAL STORE, 4109 U.S. 65 South. Date of inspection Jan. 7. Walls in dry storage are damaged and need to be repaired. Ceiling in dry storage is unclean and needs to be cleaned.
• FAMILY DOLLAR, 1169 W. 16th Ave. Date of inspection Jan. 7. Observed can goods stored directly on the floor. Can goods shall be stored at least six above the floor to be compliance with established regulations.
• FAMILY DOLLAR, 1607 E. Harding Ave. Date of inspection Jan. 6. Facility lacks refrigerator thermometer in dairy reach in cooler. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Walls in dry storage room are unclean and need to be cleaned.
• DOLLAR TREE, 2709 E. Harding Ave. Date of inspection Jan. 6. No paper towels noted at hand washing sink in restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware washing areas. Observed opening under front door. All outer openings of a food establishment should be protected against the entry of insects and rodents. Some shelving throughout the store is unclean and needs to be cleaned.
