Jefferson County Food Safety Reports for the week of 11-30-19


The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• SUPER 1 FOODS, 2800 Hazel St. Date of inspection Nov. 26, 2019. Back door in produce area is not sealed properly to prevent pests from entering. All outer openings of a food establishment should be protected against the entry of insects and rodents. Grinding block in meat department is damaged and wood is exposed to food soiling. Grinding block needs to be repaired or replaced. Flour/cornmeal shelves have food spillage on them and need to be cleaned. Observed pooled water in produce walk in cooler. Liquids should be drained from point of discharge to disposal.

• SUPER 1 FOODS deli, 2800 Hazel St. Date of inspection Nov. 26, 2019. Spaghetti (121 degrees F) and pig wings (117 degrees F) in stand up warmer on back wall were out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Spaghetti was reheated to 170 degrees F and pig wings were reheated to 168 degrees F during inspection. Cheese ball (44 degrees F) and cheese (46 degrees F) in island cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed several opened deli meats that were date marked and held for longer than 7 days in deli cooler. Deli meats should be date marked if kept for more than 24 hours and discarded after 7 days. Deli meats were pulled to be discarded during inspection. Observed several bottles of chemicals being stored next to icing in bakery area. Chemicals should be stored separate from food. Chemicals were moved under the hand washing sink during inspection. Observed containers of seasoning not labeled. Food not in the original packages for use in establishment must be identified with the common name of the food. Containers of seasoning were labeled during inspection. Counter top where coffee is stored is unclean and needs to be cleaned. Walk in cooler floor is unclean and needs to be cleaned.

• BURGER KING, 400 N. Blake St. Date of inspection Nov. 25, 2019. Observation: Observed drink area needs and counter top to be cleaned . All surfaces shall be cleaned at a frequency to prevent accumulation. Counter top and drink area was cleaned during time of inspection. Observation: Corrective Action: Walls in establishment are unclean and needs to be cleaned. Clean the physical facilities as often as necessary to keep them clean.

• CHILI’S, 5511 Olive St., Attn:Michele Bibb. Date of inspection into complaint Nov. 25, 2019. No violations observed during time of inspection.

• E-Z MART FOOD STORE, 5600 S. Olive St. Date of inspection Nov. 25, 2019. Observed plastic and wiping cloth in hand washing sink during inspection. A hand washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than hand washing. Observed bottles of chemicals being stored next to jalapenos and bread on counter. Chemicals should be stored separate from food. Chemical bottles were moved during inspection. Observed bulk container of seasoning not labeled. Food not in the original packages for use in establishment must be identified with the common name of the food. Observed boxes of food and drinks being stored directly on the floor in the walk in cooler and freezer. Boxes of food should be stored at least 6 inches off of the floor. Observed pipe leaking in back of kitchen. Pipe should be repaired so that it does not leak. Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans should be covered while not in continuous use. Floors, walls, and ceilings in kitchen area and floor in walk in freezer is unclean and needs to be cleaned.
