The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• THE TINY KITCHEN, 815 B University Drive. Date of opening inspection Nov. 6. No violations observed during time of inspection. Establishment okay to operate.
• KNM HOLDINGS DBA CHURCH’S CHICKEN, 1601 S Cherry St. Date of inspection Oct. 16. Single serve cups and other single use items stored directly on the floor. All items shall be stored six inches of the floor. Must use single service items in accordance to regulations. Observation: Facility does not have chemical sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: Establishment has missing tiles. Floor tiles need to be repaired or replaced. Floors shall be constructed and installed so they are smooth and easily cleanable. Observation: Grease build on the ceiling tiles. Clean the physical facilities as often as necessary to keep them clean.

• KNM HOLDINGS DBA CHURCH’S CHICKEN, 1601 S. Cherry St. Date of complaint inspection Nov. 14. No violations observed during time of inspection.
• POPS PLACE – PAT COLEMAN, mobile, 10217 Pepperidge Road. Date of inspection Oct. 18. Observation: Need to clean nonfood contact surfaces. (counter-top) Nonfood contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
• FOOD TROLLEY LLC, mobile, 4721 Providence Road. Date of inspection Oct. 17. Inside of refrigerator is unclean and needs to be cleaned.
• KIBB’S BAR-B-QUE #2, 2117 University Drive. Date of inspection Oct. 17. Light in the kitchen area is not shielded. Light shall be shielded, coated or shatter-resistant bulbs to protect from breakage.
• PINE BLUFF HIGH BASKETBALL CONCESSION, 1000 Beech St. Date of inspection Oct. 17. Concession not in operation during time of inspection. Observed dead insects throughout concession. Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Cabinets, counter tops, and drawers in establishment are unclean and need to be cleaned. Floors in concession are unclean and need to be cleaned.
• PINE BLUFF HIGH TRACK CONCESSION, : 711 W. 11th Ave. Date of inspection Oct. 17. Concession not in operation during time of inspection. No soap observed in concession. Provide an adequate supply of hand cleanser (liquid, powder, or bar) at each hand washing sink. No paper towels observed in concession. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Observed several live insects in concession. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminating harborage conditions. No test strips observed in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions. Counter tops in concession are unclean and need to be cleaned. No water available in concession. Water should be available in concession before next use. Floors and walls in concession are unclean and need to be cleaned. Lights in establishment do not have a protective shield over them. All lights should be properly shielded.
• ROBERT R. MOOREHEAD SCHOOL, 2601 Fluker St. Date of inspection Oct. 17. Observed Hand washing sink was blocked by trash can and cardboard boxes. A hand washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than hand washing. Trash and cardboard boxes was removed during time of inspection. Observation: Observed missing tiles in the hot water heater area. Missing shall repaired or replaced. The physical Facilities shall be maintained in good repair.
