The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• Subway, 1620 Main St., #A. Date of follow-up inspection Aug. 1. This follow up assessment regards items #1 and 20 only (Person in charge present, demonstrates knowledge, and performs duties and Proper cold holding temperatures).
• Popeyes Louisiana Kitchen, 3411 South Camden Road/120 Commerce Drive. Date of opening inspection Aug. 2. No violations observed during opening inspection. Establishment is okay to operate.

• Off The Grill, 1219 S. Main St. Date of opening inspection Aug. 8. No violations observed during time of opening inspection. This establishment is okay to operate.
• Tasty-Donuts, 8021 Dollarway Road, White Hall. Date of opening inspection Aug. 8. Establishment okay to operate. No violation observed during opening inspection.
• Sonic Drive In, 2407 Olive St. Date of inspection Aug. 6. Employee scooping ice for drinks with single service cup and no gloves on. No bare hand contact with exposed, ready-to-eat food or ice. Use gloves, spatulas, tongs, deli tissue or other dispensing equipment. Manager corrected employee. Told them to use the scoop. Several flies in establishment at time of assessment. Control them as best you can.
• A Small World Day Care Center, 1227 W. Fifth Ave. Date of inspection Aug. 5. Observed sugar out of the original container. Food not in the original packages for use in Establishment must be identified with the common name of the food.
• Covenant Recovery Inc., 3201 W. Pullen St. Date of inspection Aug. 2. Wiping cloths were observed sitting on the counters in the kitchen. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to Retail Food establishment. Observation: Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue should stay covered while not in continuous use.
• J-Mart Store, 13800 Dollarway Road, White Hall. Date of inspection Aug. 1. Active managerial controls to maintain food safety not observed during time of inspection (See item #8 — No hand washing signs at hand sinks. Post hand washing reminders at all hand sinks. No paper towels at kitchen or restroom hand sinks. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Corrected.) Inside of ice machine visibly soiled. Clean inside ice machine. No address on ice bags. Store bagged ice needs store address on bags. Metal ice scoop is splitting and curling up. Replace it so metal fragments won’t get into the ice. Damp wiping cloth on hand sink. Rinse in use wiping cloths in a sanitizer solution between tasks. Ice machine/Bagging room not constructed to food service standards. Remodel area to food service standards. Compartment sink and it’s area visibly soiled. Clean area and sinks. Inside of walk in cooler and floors at baseboards and under equipment visibly soiled. Clean these areas. Ceiling tiles missing or in disrepair in preparation and ice bagging areas. Repair?replace tiles.
• Snack-n-Shop, 10900 U.S. 270. Date of inspection Aug. 1. Store bagged ice has no store address on bags. Place address of where bagged on ice bags. Metal ice scoop has splits and has been flaking off metal. Refinish damaged portion of scoop or replace it. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Existing two compartment sink used for ware washing. Food code requires three compartment sink set up for washing, rinsing and sanitizing utensils and wares along with a separate hand wash sink.
• Subway Redfield, 1017 Sheridan Road, Redfield. Date of inspection July 31. Observed hand-washing (sink) being used for other purpose. A hand-washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than hand washing. Food was removed from hand-washing sink during time of inspection.
• Altheimer Food Mart, 200 E. Front St., Altheimer. Date of inspection July 30. Crackers and cookies out of the original package in the deli were not labeled properly. Food packaged in Retail Food Establishment, shall be labeled as specified in law.
