The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• Hardee’s, 2828 W. 28th Ave. Date of inspection into complaint March 22. No violations pertaining to complaint during inspection.
• Kentucky Fried Chicken, 2707 W. 28th Ave. Date of inspection into complaint March 22. No violations pertaining to complaint during inspection.

• Dotties on the Mezzanine, P.O. Box 7009. Date of follow-up inspection March 21. No violations reported.
• Shipley Donuts, 1300 S. Main St. Date of follow-up inspection March 20. No violations reported.
• Sha’s Sweet, 3214 Old Warren Road. Date of inspection into complaint March 25. No violations observed during time off inspection.
• Neighbor to Neighbor Inc., 1419 Pine St. Date of inspection March 27. No hand washing sign at hand sink in kitchen. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Provided sign was posted during assessment. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Some light bulbs in preparation are not properly shielded. Properly shield bulbs or install shatterproof bulbs. Fryers are not under an approved vent system. Contact ADH HVAC Section for regulations on vent hood systems.
• Creative Minds, 906 E. 21st Ave. Date of inspection March 26. Observed two packages of raw beef being stored on shelf above fruit. Raw beef should not be stored above fruit. Raw beef was moved to bottom shelf during inspection.
• Teri Foods Inc., 902 River Road. Date of inspection March 26. Observation: Observed no paper towels at hand washing sink. Corrective Action: Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. Paper towel was placed at hand washing sink during time of inspection. Observation: Observed cheese in the refrigerator at temperature. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Food was moved to another cooler during time of inspection.
• Wendy’s, 2909 W. 28th Ave. Date of inspection March 22. Sour cream (77 degrees F), sliced tomatoes (76 and 67 degrees F), and diced apples (76 degrees F) temped in prep coolers, beef patty (52 degrees F) in meat prep cooler, and chili (54 degrees F), whole onion (51 degrees F), and milk (51 degrees F) in walk in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed trash cans containing food residue not being covered while not in continuous use. Trash cans containing food residue should be covered when not in continuous use. Some parts of floor in establishment, especially under and behind equipment, are unclean and need to be cleaned.
• Wendy’s, 2909 W. 28th Ave. Date of follow-up inspection March 25. Sliced tomatoes (45 degrees F), diced apples (59 degrees F), and diced tomatoes (51 degrees F) in prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.
• Wendy’s, 2909 W. 28th Ave. Date of follow-up inspection March 26. No violations reported.
• Addi’s Corner 2, 101 N. Blake St. Date of inspection March 25. Internal thermometer not noted in establishment. Thermometer needed to test internal temperature of food. Observed single use cups at self service drink station being stored out of package and not protected. Single use cups should be stored in original packaging or by other means that protects them from contamination until used. Test strips not observed during inspection. Need test strips to test sanitizer strength. Observed trash cans containing food residue being stored uncovered. Trash cans containing food residue should be covered when not in continuous use. Some floors in establishment are unclean and need to be cleaned. Some floor and ceiling tiles are damaged and need to be replaced.
