Jefferson County Food Safety reports for the week of 3-9-19


The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• McDonald’s, 2908 E. Harding Ave. Date of inspection Feb. 25. Some cold hold temperatures in prep cooler on line and reach in cooler across from ware washing area are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed live insects in establishment. The premises shall be free of insects, rodents, and other pests and measures must be taken to eliminate their presence. Observed used wiping cloths sitting on counter tops. Wiping cloths should be kept in a sanitizer solution between use. NC Floors throughout facility, especially under equipment and shelving, are unclean and need to be cleaned. Damaged wall in dry storage near entrance needs to be repaired. NC Missing ceiling tile in dry storage area needs to be replaced.

• McDonald’s, 2908 E. Harding Ave. Date of follow-up inspection March 5. No violations reported.

• Holiday Inn Express, 7800 Sheridan Road, White Hall. Date of inspection March 4. No test strips noted in kitchen. Test strips must be available and used to test the strength of chemical sanitizing solutions.

• Super 8 Motel, 1 Hospitality Lane, White Hall. Date of inspection March 4. Observed pancake mix dispenser being stored in the hand washing sink. A hand washing sink shall be maintained so that it is accessible at all times for employee use and do not use for purposes other than hand washing. Pancake mix dispenser was removed from hand washing sink during inspection.

• Tropical Smoothie Cafe, 502 Mallard Loop, Suite E. Date of follow-up inspection Feb. 22. Some food in smoothie prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

• Tropical Smoothie Cafe, 502 Mallard Loop, Suite E. Date of follow-up inspection March 4. No violations reported.

• El Parian Mexican Restaurant, 2504 W. 28th Ave. Date of inspection Feb. 28. No soap observed at two hand washing sinks. Provide an adequate supply of hand cleanser (liquid, powder, or bar) at each hand washing sink. No paper towels observed at hand washing sink. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each handwashing sink in food preparation, toilet and warewashing areas. Observed some food being stored throughout facility uncovered. All food should be covered while being stored to protect from contamination. Observed container of raw chicken being stored directly on top of tamales in reach in freezer across from automatic dishwasher. Raw chicken should be stored separate from tamales. Raw chicken was moved to the bottom of the freezer during inspection. Cheese dip in reach in cooler noted at 56 degrees F and milk in sliding door cooler noted at 46 degrees F. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Used wiping cloths observed sitting out on counter tops. Wiping cloths should be kept in a proper sanitizer solution between use. Observed single use containers being reused to store food in. Single use items must not be reused. Handle on hand washing sink across from mop sink room is broken and needs to be repaired. Observed a leak in the hand washing sink next to reach in cooler. Sink should be repaired so that it is free from leaks. Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue should stay covered while not in continuous use.

• Inspired Nutrition, 2506 W. 28th Ave. Date of inspection Feb. 28. Restroom doors are not self closing. Restroom doors should be self closing.

• Kinder Prep Christian Academy, 908 S. Cherry St. Date of inspection Feb. 28. Observed no thermometer in refrigerator. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Observed nurt-grains bars stored directly on the floor. Food must be stored in compliance with established regulations.

• Nita’s Call-in, mobile, 3302 S. Georgia St. Date of inspection Feb. 22. Some food in stand up refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

• Nita’s Call-in, mobile, 3302 S. Georgia St. Date of follow-up inspection Feb. 28. No violations reported.

• Ridgway Christian School, 3201 Ridgway Road. Date of inspection Feb. 28. Observation: No hot water available at hand washing sink. Hot water generation and distribution system shall be sufficient to meet the peak water demands throughout the retail food establishment.
