The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:
• DJ’s One Stop Inc., 8885 U.S. 79 South. Date of follow-up inspection Feb. 14. All violations corrected during time of follow-up inspection.
• Days Inn, 406 N. Blake St. Date of inspection Feb. 13. Observation: Observed no current health permit posted in establishment. Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law.

• Hazel Fine Deli Grocery, 2510 S. Hazel St. Date of inspection Feb. 13. Observed cracker out of original (container). Food must be label with original name. Food packaged in retail food establishment, shall be labeled as specified in law.
• Tropical Smoothie Cafe, 502 Mallard Loop, Suite E. Date of inspection Feb. 13. Some food in smoothie prep cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.
• Fred’s Discount Store, 2809 S. Camden Road. Date of inspection Feb. 12. Observation: No hot water available in restroom.
• Popeye’s Louisiana Kitchen, 8101 Sheridan Road/120 Commerce Drive, White Hall, per S. Merritt, changed. Date of inspection Feb. 12. Observed trash cans containing food residue not being covered while in continuous use. Trash cans containing food residue should be covered while not in continuous use. Floors in establishment, especially under dry storage shelves and chicken prep area, are unclean and need to be cleaned.
• Taco Bell, 8001 Sheridan Road, White Hall. Date of inspection Feb. 12. No toilet tissue observed in stall in women’s restroom. A supply of toilet tissue shall be available at each toilet. Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue should be covered when not in continuous use.
• Main Street Food Mart, 1620 Main St. Date of follow-up inspection Feb. 11. Some temperatures in the walk in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Food out of temperature was discarded or moved during inspection. No thermometer noted in refrigerator holding milk. Food temperature measuring device shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperature. Three compartment sink is visibly unclean and needs to be cleaned. Restroom door does not have a self closure. Restroom should be provided with a self-closing door. Some ceiling tiles in ware washing area are damaged or missing and need to be replaced. Some floors, especially under all equipment, are unclean and need to be cleaned. No lighting observed in room with ice machine. Lights needed in room with ice machine.
• Chef King Inc., 2318 W. 28th Ave. Date of follow-up inspection Feb. 8. All critical violations corrected at time of follow-up inspection.
• David Vaughn Head Start Center, 2101 W. 11th Ave. Date of inspection Feb. 8. Observation: [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept hot at a temperature of 135.0°F or above, as measured by an internal probe thermometer, to limit bacterial growth. Make sure plug in hot hold unit to ensure proper temperature (135 and Above.) Make sure to check temperature of food before serving. (Inspector spoke with case manger about this issue.) Observation: Observed trash cans containing food with no lid. Trash cans shall have lids when not in use. Observation: Observed food debris on wall in eating (area.) The physical facilities shall be cleaned as often as necessary to keep them clean. The wall was cleaned during time of inspection.
• Little Caesar’s, 2300 W. 28th Ave. Date of inspection Feb. 8. Observed some bottles of chemicals being stored on box of food and by cutting board. Chemicals should be stored separate from food, equipment, utensils, linens, and single service items. Chemical bottles were moved to chemical storage area during inspection. Observed used wiping cloths being stored on shelves and boxes in kitchen. Wiping cloths shall be kept in a sanitizer solution between use.
• Rally’s Hamburgers, 2301 W. 28th Ave. Date of inspection Feb. 8. Seal on passenger side prep cooler door is broken and does not seal properly. Seal on prep cooler door should seal properly. Floors, especially under drink machines and equipment in kitchen, is unclean and needs to be cleaned. Some floor tiles in the walk in cooler and walk in freezer are broken and need to be replaced.
• 34th Avenue Elementary School, 801 E. 34th Ave. Date of inspection Feb. 7. Personal fan next to milk box is unclean and needs to be cleaned. Vent on ceiling in front of office in kitchen is visibly unclean and needs to be cleaned.
• Dollar General, 5104 Dollarway Road. Date of inspection Feb. 7. No paper towels supplied at hand-washing sink in employee restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. No toilet tissue observed in customer restroom. A supply of toilet tissue shall be available at each toilet.
