Jefferson County Food Safety reports for the week of 12-16-18


The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• DI’s Bar and Grill, 1310 S. Blake St. Date of inspection Dec. 13. Wiping cloths were observed sitting on the counters in the kitchen. Wiping cloths shall be used as intended and in compliance with Regulations pertaining to the establishment. Observation: Need to clean non-food contact surface. (Counter-top)

• L. A. DAVIS – ARAMARK, L.A. Prexy Davis Drive. Date of inspection Dec. 13. Observed paper cups stored on the floor. Items must be stored to prevent contamination. Cups were stored at least 6 inches above the floor during time of inspection. Standing water in kitchen, floor drain or ice machine needs to be repaired.

• Aisha’s – mobile, 2707 W. Eighth Ave. Date of inspection Dec. 12. Observation: NO sanitizing test strips in establishment. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.

• Country Kitchen, 4322 Dollarway Road. Date of inspection Dec. 12. Observed raw beef being stored above ready to eat foods in reach in cooler in kitchen. Raw meat should be stored below ready to eat foods. Raw beef was placed on the bottom shelf during inspection. Some food being stored in walk in cooler is uncovered. Food should be covered while being stored to prevent contamination. Food was covered during inspection. Observed food prepared on site in kitchen held for more than 24 hours with no date marking. Food was date marked during inspection. Observed dead pest on trap in dry storage area. Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests. Trap was discarded during inspection. Observed boxes of food being stored directly on the floor in the back walk in freezer. Boxes of food should be stored at least 6 inches off of the ground. Used wiping cloths observed sitting on counter tops. Wiping cloths should be kept in a sanitizer solution between use. Single service containers observed being reused throughout establishment. Single service containers should not be reused. Cutting board should be resurfaced or replaced. Seal on walk in freezer door is broken and needs to be repaired. Shelves in dry storage area are unclean and need to be cleaned.

• Delta – ARAMARK, 1701 S. Spruce St. Date of inspection Dec. 12. Observation: Two refrigeration units not maintaining 41 degrees or below. All cold hold storage shall maintain 41 degrees or below. Establishment moved all potentially hazards food from both units to refrigeration that is maintaining the correct temperature. [List food item(s), temperature, and unit] Corrective Action: Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observation: Observed standing water in kitchen, floor drain needs to be repaired. Floor shall be designed, constructed, and installed so they are smooth and easily cleaned.

• Lybrand’s Bakery, 2900 Hazel St. Date of inspection Dec. 12. Some cold temperatures in bakery refrigerator are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Observed single use containers being reused to store food in. Single use containers should not be reused. Personal fans in kitchen near three compartment sink and prep cooler are unclean and need to be cleaned. Some floors, especially under and behind cooking equipment, are unclean and need to be cleaned.Vent hood is unclean and needs to be cleaned.

• Sonic Drive In, 3410 Camden Road. Date of inspection Dec. 12. Observation: Need to clean non-food contact surfaces. Equipment is used for storage of packaged or unpackaged food shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

• Ranch House Bar-B-Que, 6224 Dollarway Road. Date of inspection Dec. 11. Some cold hold temperatures are out of safe temperature range in refrigerators beside oven and across from dishwasher. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth. Cutting board under hot holding pans needs to be resurfaced or replaced.

• Super 1 Foods, 2721 Camden Road. Date of inspection Dec. 11. Observation: All employee drinks in the food preparation area must have a lid and a straw. (Specific observation here) Corrective Action: Discontinue consuming food, use of unapproved beverage containers, or use of tobacco in food preparation or warewashing area. Drink was discarded during time of inspection.

• Super 1 Foods — deli, 2721 Camden Road. Date of inspection Dec. 11. Observed bucket sitting in handwashing sink. Handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing.
