Jefferson County Food Safety reports for the week of 12-11-16


The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• Kitchen Kung Fu, 8500 Dollarway Road, White Hall. Date of inspection Nov. 23. Demonstration of knowledge of food safety evident throughout the facility or by appropriate responses and actions (Not in compliance; repeat violation.) Hand washing sink should not be used for any other purpose than washing hands; need paper towels at hand washing sink in kitchen (Not in compliance; repeat violation.) Food in all coolers, freezers, and dry storage should be covered while being stored (Not in compliance; repeat violation.) Can opener blade needs to be properly cleaned and sanitized (Not in compliance; repeat violation.) Automatic dishwasher is not sanitizing dishes properly (Not in compliance; repeat violation.) Some hot holding temperatures out of safe temperature range — must be 135 degrees F or above (Not in compliance; repeat violation.) Some cold holding temperatures out of safe temperature range — must be 41 degrees F or below (Not in compliance; repeat violation.) Containers with seasonings out of their original packaging should be labeled with common name of food (Not in compliance; repeat violation.) Insect control devices should not be located over food preparation areas in kitchen (Not in compliance; repeat violation.) All outer opening should be protected against the entry of pests — observed gaps in back door and hole in wall in dry storage (Not in compliance; repeat violation.) Plates on buffet bar should be stored covered or inverted; (Not in compliance; repeat violation.) Single service containers should be stored in original package or by other means to prevent them from contamination; single service cans should not be reused. (Not in compliance; repeat violation.) Need test strips to test sanitizer strength (Not in compliance; repeat violation.) Shelves in dry storage need to be cleaned; outside of equipment and prep cooler needs to be cleaned. (Not in compliance; repeat violation.) Trash cans containing food residue should be kept covered when not in continuous use (Not in compliance; repeat violation.) Floors throughout kitchen need to be cleaned (Not in compliance; repeat violation.)

• Blake Street Fish Market, 1130 S. Blake St. Date of inspection Nov. 23. Seasoning out of original package in bulk bin should be labeled with common name of food (Not in compliance; repeat violation.) All outer openings of a food establishment should be protected against the entry of insects and rodents (Not in compliance; repeat violation.) Cutting boards should be resurfaced or replaced (Not in compliance; repeat violation.) Need test strips to test sanitizer strength (Not in compliance; repeat violation.) Three compartment sink needs to be cleaned. (Not in compliance; repeat violation.) Outside of fryer equipment and shelving throughout kitchen needs to be cleaned (Not in compliance; repeat violation.) Floors need to be cleaned; some flooring throughout kitchen needs to be repaired. (Not in compliance; repeat violation.) Current permit not posted (Not in compliance; repeat violation.)

• El Sol Mexican Restaurant, 3801 Camden Road, Suite 9. Date of inspection Nov. 29. Food is being stored on the floor; should be stored at least six inches above the floor (Not in compliance; repeat violation; corrected on site during inspection.) The plates should be stored inverted to prevent contamination (Not in compliance; repeat violation.)

• Fino Italian Restaurant, 310 E. Fifth Ave. Date of follow-up inspection Dec. 2. No violations reported.

• New China Town, 2801 Olive St., 9-A. Date of follow-up inspection Dec. 5. Food in opened packages should be stored at least 6 inches off of the floor (Not in compliance; repeat violation.) Wiping cloths should be kept in a sanitizer solution between use Not in compliance; repeat violation.) Shelf near grill should not be lined with cardboard boxes (Not in compliance; repeat violation.) Floors and walls throughout kitchen and ceiling in dry storage and walk in cooler need to be cleaned (Not in compliance; repeat violation.) Cardboard boxes should not be used on walk in cooler floor (Not in compliance; repeat violation.)

• Catering By Scott Ray, 9231 Highway 270, White Hall. Date of follow-up inspection Dec. 5. Air vents on the outside of the vent hood need to be cleaned (Not in compliance; repeat violation.)

• Katering Kok0, 2401 S. Main St. Date of construction inspection Dec. 5. Need test strips to test for sanitizer strength (Not in compliance; repeat violation.)

• Dollar General, 14019 Dollarway Road; attn: tax dept.; White Hall. Date of inspection Dec. 5. No current permit posted (Not in compliance; repeat violation.)

• Ms. B’S School Days, 202 Michelle Ave, White Hall. Date of inspection Dec. 5. Need test strips to test sanitizer strength (Not in compliance; repeat violation.)

• DI’s Bar and Grill, 1310 S. Blake St. Date of inspection Dec. 6. Observation: Need to clean non-food contact surface — counter-top (Not in compliance; repeat violation.) There are some missing floor tiles that need to be repaired/replaced; observation: need to clean wall in kitchen area (Not in compliance; repeat violation.)

• China Garden Buffet, 7203 Sheridan Road, Suite N and O, White Hall. Date of inspection Dec. 6. Food being stored should be covered to prevent contamination (Not in compliance; repeat violation; corrected on site during inspection.) Some cold holding temperatures out of safe range — must be 41 degrees F or below (Not in compliance; repeat violation; corrected on site during inspection.) Seasonings out of the original containers should be labeled with common name of food (Not in compliance; repeat violation; corrected on site during inspection.) Paper towels should be provided at all hand washing sinks; front hand washing sink needs to be cleaned; hand washing sinks should not be used for any other purpose than washing hands (Not in compliance; repeat violation.)
