Jefferson County Food safety reports for the week of 11-20-16


The Arkansas Department of Health regulates the sale of food at establishments which include restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• White Hall Food Express, 8003 Sheridan Road, White Hall. Date of inspection Nov. 15. Hand washing sink should not be used to store dishes and should only be used to wash hands (Not in compliance; repeat violation.) Paper towels should be provided at hand washing sink (Not in compliance; repeat violation.) Food being stored in reach in coolers should be covered to prevent contamination (Not in compliance; repeat violation; corrected on site during inspection.) Raw meat should not be stored above pre-cooked items (Not in compliance; repeat violation; corrected on site during inspection.) Single service cups should be stored in their original packaging or by other means that protects them from contamination until used (Not in compliance; repeat violation.) Seal on reach in cooler door needs to be repaired (Not in compliance; repeat violation.) Floors by fryers in kitchen and throughout walk in cooler need to be cleaned (Not in compliance; repeat violation.) Aprons should be stored away from equipment and single service items (Not in compliance; repeat violation; corrected on site during inspection.)

• First Baptist Church Preschool, 8708 Dollarway Road, White Hall. Date of inspection Nov. 15. Food out of its original packaging should be labeled with the common name of the food it contains (Not in compliance; repeat violation; corrected on site during inspection.)

• Rock ‘N Annie’s, 801 E. Sixth Ave. Date of inspection Nov. 16. Need test strips to test sanitizer strength (Not in compliance; repeat violation.) Men’s restroom door should be self closing. Men’s restroom door should be self closing (Not in compliance; repeat violation.) Floors in kitchen need to be cleaned (Not in compliance; repeat violation.) All lights in kitchen area should be shielded (Not in compliance; repeat violation.) Need more lighting in ware-washing area (Not in compliance; repeat violation.)

• The Wild Hog Inc., 4600 Dollarway Road. Date of inspection Nov. 16. Cups in freezer should be stored in a way that prevents them from contamination (Not in compliance; repeat violation.) Three compartment sink needs to be cleaned (Not in compliance; repeat violation.)

• Big Red Travel Plaza, 8110 Sheridan Road, White Hall. Date of inspection Nov. 16. Scoop with a handle should be used for fish breading (Not in compliance; repeat violation; corrected on site during inspection.) Raw meat should not be stored above ready to eat foods (Not in compliance; repeat violation; corrected on site during inspection.) Food in freezer and being stored should be covered to prevent contamination (Not in compliance; repeat violation; corrected on site during inspection.) Meat slicer needs to be cleaned and sanitized (Not in compliance; repeat violation; corrected on site during inspection.) Ice machine deflector shield needs to be cleaned (Not in compliance; repeat violation; corrected on site during inspection.) Some hot holding temperatures out of safe range (Not in compliance; repeat violation; corrected on site during inspection.) Ice bags containing ice that is packed in store should be properly labeled with identifying information on them (Not in compliance; repeat violation.) Outside of grill needs to be cleaned (Not in compliance; repeat violation.) Floors in kitchen, especially under equipment, need to be cleaned (Not in compliance; repeat violation.)
